Mashed potato martinis or other kinds of mashed potato stations seem to be very big now. Have you already spoken with caterers that won't do that? Almost every caterer I've spoken has offerred that option as well as other stations including crepes (I haven't seen omelette so much becuase we're not looking at brunch) --  but maybe that's more the kosher caterer thing as I've spoken with mostly kosher caterers who are looking for creative options with no dairy. (They do mashed potatoes with non-dairy creamer, I guess)....
