Christmas Desserts

I'm tired of making pies.  We always bring the dessert to H's family's Christmas dinner, but I'd like to spice it up this year.  What are your go-to Christmas desserts?  Bonus if there's a link to the recipe and it doesn't take 5 hours.

  • We always have a chocolate cake topped with mint icing then topped again with melted chocolate. It's like one of the Andes mints they give out at Olive Garden. It's a recipe my mom cut out of a magazine like 20 years ago, but it's pretty straight forward and you could probably find something similar online. 
  • We do traditional scandinavian cookies, usually krumkake.  It takes a special kind of machine to make.  My mom also always makes homemade cinnamon rolls for Christmas, so we usually wake up to the smell of cinnamony goodness.  It's fantastic.

  • I like to make regular pies, and chocolate chip cookies with crushed andes mints.  Oh, and pumpkin cookies.  This is making me want to bake.
  • Blackberry Fool, which is basically a very heavy, flavored crème dessert.  It is easy as, or rather much easier than, pie, and is usually a crowd pleaser, and you can do it several different ways.  For a party I'm hosting Saturday I'm putting it into little bite sized chocolate cups, but I'm just trying to be a show off.  It's wonderful just served in a big bowl too!

  • My mom makes Death By Chocolate.  Make chocolate cake (2 9" rounds), and cube it with a butter knife.  Layer in a trifle dish or large glass bowl with one layer of cake, one of chocolate pudding, one of whipped topping, until bowl is full.  Top with candies (peppermint bits, Heath bar bits, stuff like that).

  • I love Giada de Laurentiis' hazelnut crunch cake, Ina Garten does an awesome red berry trifle and Bobbly Flays german chocolate cake is delicious.  I've made all of these and they were all a hit.  You can find them all on foodnetwork.com

    Brownie cups: Prepare brownie mix according to whatever box you use.  Pour into muffin tin.  With 5 minutest left of baking time, remove from oven and push a peanut butter cup gently into the top of each and place back in the oven until they've finished.

    Christmas bark:

    Ingredients:
    -Sleeve of saltine crackers
    -2 sticks of butter
    -1/2 cup of brown sugar
    -12 oz. bag of chocolate chips
    -Parchment paper
    -M&M's (whatever candy you want)

    1) Line cookie sheet with the parchment paper. Lay crackers flat.
    2) Melt the two sticks of butter and add the brown sugar on the stove and stir for three minutes. Be careful it doesnt burn!
    3) Pour the butter and brown sugar mixture on the crackers and bake at 350, at most for 15 minutes. I would check it around 10 minutes because it can burn fast.
    4) Put the bag of chocolate chips on top of the crackers right away when they're hot and smooth with a knife.
    5) Top with the M&Ms.
    6) Put in the fridge for an hour.
    7) Break into pieces.

  • I do pies usually for Christmas (apple or pecan, usually), but I also do creme brulee so I can justify the fact that I own a culinary blowtorch.  Here's a recipe that has egg nog, if you want it to be more holiday-y (I usually just do regular creme brulee).

    I make my own lemon curd, so that adds to the time, but this is my go-to favorite for Christmas Dessert
  • French Silk Pie (we've always used a premade piecrust, and a kitchenaid stand mixer makes this super easy to make - you just have to be careful who you serve it to, as it does have uncooked eggs in it).

    We are making a Lemon Freeze dessert this year that has Nilla wafers, lemon juice, lemon zest, sweetened condensed milk - kind of like a frozen lemon meringue pie, without the meringue.
