I know this sounds like a silly question but when making the guest list do I include myself and my fiance? I want to get an accurate count so when it comes to the catering I know how much food to have. Would I also count children and infants?

You should count anyone who is eating when you give the number to the caterer, so that would inclue you and your FI, as well as kids who are eating (I'm assuming the kids will eat, although you might offer a children's option for them).

Yes, count everyone who will be there. If you are eating and taking up a seat, you will need to put yourself on the count.

dont forget to count vendors who will be working your event (dj, photographer, etc)

Yes - and check with your caterer if there are reduced costs for children.

For myself: I have my guest list on excel, and for children under 2 (which are free) i have in one column, children 2 - 5 are half price so I have them in another column, in another column and 5 and over full price in another column.  This helps me figure out my budget, but I also have the full amount of guests for figuring out how many seats I will need.  Hope that helps.
