What's cooking, E?

Has anyone made anything new and exciting and delicious lately?  The most exciting thing I've made lately is the grilled cheese with tomato that was last night's dinner.  Bonus points if it's on the healthy side or can be pushed that way.

    My favorite thing that my FI has cooked recently was sauteed veggie wraps.  He tosses them in garlic, olive oil, and whole grain mustard (it really works!) and we put tzaziki on top (usually homemade, sometimes not) and hummus.  He isn't a huge fan, but I love it and am always asking for a repeat.
  • I made seafood pasta last night.  That was tasty.  H is grilling steaks and making me dinner tonight. 

    I am really bummed.  Our final offer on the house got rejected.  It was so close to theirs too, but the house needs so much work, we aren't willing to go up to theirs.

  • Tonight I'm making my favorite spinach salad. Spinach, sliced strawberries, raspberry vinaigrette, walnuts, feta, and craisins. It's really easy and perfect for summer. Serve with some grilled chicken for a complete meal.
  • I am currently making a bracelet....not very appetizing, but it is low calorie :)
  • I just had a flat bread pizza for lunch. I used turkey pepperoni. 15 slices is 80 calories and 4.5 grams of fat. The total calories/fat for the pizza (flatbread, turkey pepperoni, sauce, and mozzarella cheese) is 465 calories and 18.5 grams of fat. It could probably be made even healtier with a different type of bread - the flat bread I used is 260 calories and 8 grams of fat by itself. 
  • I had a super yummy spinach salad for lunch.  Super Simple

    spinach
    walnuts
    apples/pears
    crumbly blue cheese
    balsamic vinegarette dressing

    Other than that I have been eating what ever FI makes, mainly grilled and a salad.
  • I'm eating chips, but had a cheese and bacon hotdog (leftovers) and some tomatoes. 

    Uber healthy.
  • Today we are having scallops with a creamy alfredo sauce with some artisan made lemon pepper linguini. I made coconut ice cream last week but I doubt that's healthy :)
  • poke, tell me about this flatbread pizza.  How do you make it?
  • It's not really 'cooking', but I started adding a little bit of peppermint extract to my morning chocolate protein shakes, and now instead of tasting like wierd chocolate, they taste like Shamrock Shakes. 
  • I've been trying a few recipes from Rocco DiSpirito.  I made his Seafood "Fettucini" that used greek yogurt instead of cream, which was good.  I made his tuna pea casserole last night, which came out a little dry.  I'm doing a Hungry Girl recipe tonight, but her stuff is usually really high in sodium.

  • Gab, shamrock shakes, what a great idea.  I have never liked the chocolate of my protien shakes either!  Tomorrow will be different.

    Thank you for posting this!  I've been racking my brain for something to cook tonight that doesn't require the use of the oven or stove, since our AC is out. 
  • I'm making salmon tonight with a white bean salad.  Both are clickies.  It should be tasty.

    I had pasta with meatballs for lunch, however.  Tasty, yes.  Healthy, no.

  • I made this Asian Pear and Cherry Crisp pie last weekend for a friend's BBQ.  I didn't make my own crust, though, I used a boxed one.

  • Last night I made a mix of tacos/fajitas.  Ground chicken and taco seasoning with peppers and onions.  Basically it's what I had in the house so it became a combo of the two.  But it was really good and pretty healthy.  I'll eat the leftovers for dinner tonight.

  • Last night I made Grilled Chicken marinated in a vinegarette made with herbs from my garden (arugula, basil, parsley) and then I sauteed kale with garlic.

    Yum .

    </div><div>Step five - cook. I put my toaster oven on 350 and cook for about 15ish minutes. The first time you do it you'll probably have to keep an eye on it - I like mine a little more well done than some people. None of the ingredients actually need to be cooked, so if it's "undercooked" nothing will hurt you. </div>
  • I am eating my toast that I brough for breakfast that I forgot about. For lunch I am having my regular salad: Iceburg, Spinach, mozzarella cheese, green onion, corn, and crispy Chinese noodley things.

    I'm not sure what is on the dinner menu for tonight. Last night I made chicken lettuce wraps and they were amazeballs.

    I used finely diced chicken instead of ground beef, and I leave out the water chestnuts. Yuck. I don't make the sauce either.

    I don't have many healthy recipes.

    Although I did buy the ingredients to try this recipe I found on pinterest, which apparently follows the South Beach diet. But I pinned it just because it sounds good and had good reviews.


  • That looks good, Jess.  I really like her tzatziki recipe.

  • I had a small salad with grilled chicken, avocado and red wine vinaigrette for lunch, a nectarine and yogurt.

    Tonight I think we are doing hamburgers and I'll probably make brussel sprouts and toss them with craisins.

    I make a salad that is almost identical, except I use bleu cheese instead of feta.  And my dressing is a raspberry walnut vinaigrette so I skip the walnuts.

  • I have heard good things about "Flatout" bread. 90 calories for a big ole flatbread. I bought them at the store but have not tried them yet.

  • To go off of your grilled cheese, Adamar, have you ever tried this version? Sourdough bread, brie, prosciutto, and fig jam? Absolutely amazing. Best grilled cheese EVER!
  • The only salad I can get away with making for dinner is taco salad.  If I tried making H a spinach salad for dinner he'd look at me like I was nuts.  Those sound good, though.

  • Flatout is pretty good Shan.  They have a different taste/texture than other wraps, but they are pretty filling and good for the 90 calories.
