Irish Soda Bread

Anyone got a tried & true recipe for tomorrow?

  • It depends, do you want traditional or the more sweetened version people use now?

    Traditional:

    4 cups of all purpose flour.
    1 Teaspoon baking soda
    1 Teaspoon salt
    2 cups of buttermilk


    Method:

    Preheat the oven to 425 F. degrees.  Lightly crease and flour a cake pan.

    In a large bowl sieve and combine all the dry ingredients.

    Add the buttermilk to form a sticky dough.  Place on floured surface and lightly knead .
    Shape into a round flat shape in a round cake pan and cut a cross in the top of the dough.

    Cover the pan with anohter pan and bake for 30 minutes (this simulates the bastible pot).  Remove cover and bake for an additional 15 minutes.

    The bottom of the bread will have a hollow sound when tapped so show it is done.

    Cover the bread in a tea towel and lightly sprinkle water on the cloth to keep the bread moist.


    If you want it sweeter:

    3 cups all-purpose flour

    1 tablespoon baking powder

    1/3 cup white sugar

    1 teaspoon salt

    1 teaspoon baking soda

    1 egg, lightly beaten

    2 cups buttermilk

    1/4 cup butter, melted

    Preheat oven to 325 degrees F (165 degrees C). Grease a 9x5 inch loaf pan.

    Combine flour, baking powder, sugar, salt and baking soda. Blend egg and buttermilk together, and add all at once to the flour mixture. Mix just until moistened. Stir in butter. Pour into prepared pan.

    Bake for 65 to 70 minutes, or until a toothpick inserted in the bread comes out clean. Cool on a wire rack. Wrap in foil for several hours, or overnight, for best flavor.

  • My FMIL's recipe that's been handed down for generations.. Quite literally! Sorry about the Comic Sans.. I copied from her email.

    Irish Soda Bread

    Grease an 8-inch round pan.  Preheat oven to 375, 350 if dark pan.
    If your cake pans are 9-inch, increase recipe by 1/2

    1.
       Stir or sift together:
    • 2 cups flour
    • 1 1/2 tsp baking powder
    • 1/2 tsp baking soda
    • 1/2 tsp salt
    • 1 1/2 tbs sugar
    2.  Cut into the dry ingredients:
    • 1/4 cup shortening

    3.  Stir into mixture:
    • 1 cup raisins (white or dark)
    • 2 tsp caraway seeds
    4.  Blend together, then add mixture:
    • 1 egg
    • 2/3 cup buttermilk
    Mix well by hand until all liquid mixed in.  Place in greased cake pan, press down evenly.  Brush top with milk.  Cut a cross over top and sides so crust will not crack during baking.  Bake 35-40 minutes (about 5 - 10 minutes longer if larger pan).
  • I know Poli's recipe, yum- those white raisins are key.

  • I found two recipes on a WW recipe site... haven't made them but all the recipes I've used from her blog so far have been delicious...

  • Ooooh Poli...sounds good, that's what I was looking for, a good, old-fashioned recipe!  Now I just have to figure out where to get white raisins...

    Almost all grocery stores sell them. Right next to the regular ones :-)
