Morning!

I just become a big fan of cooking.. but I am kind of lame when it comes to spicing things up.

Anyone one have amazing recepies including chicken?

I have 2 easy go-to recipes for boneless chicken breasts.

Dredge slightly damp chicken breasts in crushed pistachios with salt & pepper (I like to slice them crosswise first so they're thinner). Brown in olive oil on medium high for a few minutes on each side, then finish off in the oven at about 350 for 15-20 minutes or so. Delicious, I like to serve it on a salad with greens, tomatoes, and avocado, but you can serve it with potatoes or whatever.

I also like to throw chicken breasts into yogurt and indian spices in the morning before I leave for work (curry powder, cumin, tumeric, cardamom, etc) along with some lemon juice. Put them under the broiler or grill them when you get home. Serve with rice or lentils if you want indian-style food, or they go well with indian -style cauliflower (with raisins and cashews).

We mostly cook without recipes.  I'll put chicken breasts in a skillet with a little bit of olive oil, season them with season salt, pepper, a little bit of ground red pepper, and garlic powder.  Cook through, about 15 minutes depending on how big they are, and then serve with some side dishes - usually either a whole grain/brown rice with veggies in it or potatoes with a veggie side.  That's a really easy go-to meal on a week night.

 I nix the breadcrumbs and then switch up some of the meat.  Like using chicken sausage instead of kielbasa... that kind of thing. OH, and I used red instead of white wine.

Then, usually, we have lots of meat left over because it's just FI and me. So I make chicken salad out of the leftover. It's the best chicken salad EVAR.
