Sunday Night

Hey there! What's everyone up to? Lucas just left. I feel a little better about this unemployment thing. We rolled through our finances, crunched some numbers, and we're going to be ok if I can't find something ZOMG right away. We'll have to make certain sacrifices, but that's to be expected. #1 priority: Find someone to rent and or buy this house.

  • WAIT I MISSED SOMETHING.  You're unemployed?  I'm so sorry :(  Gah.

    I'm at work, writing grad school personal statements (it makes it a little less painful that I'm getting paid while I write, though they still hurt my head), planning my anniversary gift to H, and counting down the hour and a half until I no longer have to work another endless weekend here!

    And then I'm going home, and making H give me a massage.

  • Yeah J&K. I got laid off on Thursday.

    I saw your anniversary idea over on SB. I think it's awesome. I didn't vote, but I would do individual maps in frames with a few photos from each trip.

    Good luck on the grad school applications. I've been thinking about going back, but I don't know for what, so I haven't looked in to it all that much.

  • Aw, man, I'm so sorry.  I'm glad you guys were able to crunch numbers and determine that it was going to be ok, though.  I've gone a couple long rounds with the unemployed asshole, so if you ever need to talk, shoot me a message.

    I'm adding a year of monthly dates to the maps!  I'm so excited.  This is the most thoughtful, creative, awesome gift I've ever done, and now I finally understand people being so excited for people to open their gifts (that sounds awful...I'm always excited to give people gifts, but never like "ZOMG YOU HAVE TO OPEN IT NAO!!!!!"  I have 4 months to go, and it's a good thing these are going to take me forever, because I don't think I could wait that long otherwise).

    You should totally go back.  School is fun.  What is your field now?  I feel like I should know this.

  • This is definitely new territory for me. I'm just trying to be positive and think of it as a blessing in disguise.

    My background is in hospitality. I went to Johnson & Wales for Internationa Hotel & Travel Tourism Management. Specialty in conference and event planning.

  • I love being an event manager. I think it's something I was meant to do and I'm really good at it.

    Sometimes though I would love to own a little bookstore cafe. It's something Lucas and I would both love to do.

  • My dream thing to occupy my time would be: knotting... J/K.. sort of :).  

    Event planning probably.  My aunt works for a non-profit that raises money for her city and so she works part time and spends her work time planning fundraisers to support community programs and stuff.  Auctions, and dinners, and stuff.  It sounds like so much fun.  And I love to plan stuff.
  • Have you considered going back for a business degree then?  You could still work as an event manager or something similar, but maybe start thinking about opening that bookstore!

    I am watching movies and running around on pinterest looking for healthy food ideas. I have got to get some weight off and eat right. I found a few ideas. Breakfast is my killer. I like a hot meal, something fast, that's healthy. Lately I've done scrambled egg in a cup with a fuze, but I can see that getting old fast.

    I should have graded papers today, but uh, it hasn't happened yet.

    I just made awesome smoked shrimp and grits.  And collard greens.  I'm turning into a good Southern wife.
  • H and I would love to own/run a bed and breakfast sometime.  We've talked about it as something to do in retirement (or if we can - an early retirement).  

    Whit - I have made egg fritatta things in muffin tins.  I added sausage, spinach, onions and cheese to mine, baked them in muffin tins for 25 minutes (or until egg has set) and then I just microwave in teh morning.  You could do them with ham, or bacon in them too for a quick breakfast.  Two of them on a toasted bagel makes a yummy egg sandwich.

    What's with you people and events?  Why didn't you offer to plan me a wedding?  HUH?!

    I've finally (in writing personal statements, oddly enough) figured out what my ultimate dream would be.  And it's not that exciting.  Ha.  But I would love to start up my own non-profit working with youth that are reintegrating back into the community/home/school from a secure facility.

    I gotta be honest. I want to work, I really do, but when we saw that we would be alright on just H's salary I had visions of SAHW-dome and immediately thought of you. :-)

    Whit I have her 300 Under 300 cookbook. All of the recipes in there are under 300 clories. She has a baked butternut squash fries recipe that is amazing.

    Whit - I made a big bowl of scrambled eggs, mixed in the meat and veggies and stuff and then poured it into the muffin tins to bake.  Sautee the onions and spinach and brown the meat ahead of time (and let it cool so it doesn't cook the egg) cause it won't bake down enough in the oven.

  • Whit I think I have some things pinned on my food board for different oatmeals as well. She also has a ton of awesome oatmeal recipes that don't seem healthy, but totally are. S'mores Oatmeal? PB&J Oatmeal? Nom

  • Me too Loopy. I normally just open a can of Campbell's, but I found this awesome recipe for roasted tomato soup, so now I make it from scratch. So worth it.
