Post your favorite healthy recipes here!!! (all meals)

I know I can google "diet recipes" or the like, but it's always kind of a gamble on how it will turn out. I never know if it's going to taste like glue, and leave me hungry an hour later. I think I would have better luck getting recipes from a "real" person, who has tasted it and served it to the man in their life.

I'm looking for things that are filling, that you are able to eat guilt free on a regular basis, and what you serve as sides. I think we had green beans 3 nights last week.

  • I really like the skinnytaste recipe for baked oatmeal.  FI and I made it a ton when it was colder out, but I think it is still good anytime.  We would make it for dinner but obviously it can go for breakfast too. http://www.skinnytaste.com/2012/01/baked-oatmeal-with-blueberries-and.html

    I try to do sweet potatoes or brown rice for sides as well as broccoli or asparagus.  We are also big into making dinner salads with baked chicken, tomatoes, red pepper and cucumbers topped with cracked pepper and peach vinegar/olive oil.

    Quinoa! It's a high protein grain. Super tasty. Find a quinoa pilaf recipe. I like ones with walnuts and raisins.


    ETA: Things I eat to be filling: raw almonds, Greek yogurt (sometimes with walnuts or pecans or BareNaked granola because it has less sugar), raisins, arugula salads with pine nuts/lemon juice/parmesan/grapeseed oil, WATER. Side dishes: quinoa, wild rice (not white rice), carrots, sauteed spinach, asparagus, sauteed green beans, steamed broccoli, baked acorn squash, sweet potatoes...

    Lebanese Lentil and Collard Green soup. I make this with sliced chicken breast. Tasty.

  • I like taking chicken breast and cutting it up into 1" size pieces.  Coat in egg and then roll in italian breadcrumbs/seasonings and bake.  They are a healthy version of a chicken nugget.

    Just to name a few; I have a lot. Like PP said skinnytaste.com is a great site for healthy recipes, as is SparkRecipes.

    For sides, we rotate veggies. Sometimes we'll roast asparagus with some olive oil spray, kosher salt and oregano or another spice. Sometimes we'll do steamed broccoli or some green beans or frozen mixed veggies we just pop in the microwave.

    For starches, I have tried to get myself to like brown rice and I just can't unless it's in a stir fry or mixed with other things. We did find a broccoli mashed potato recipe (LINK) from Eating Well that tastes delicious and because you're adding broccoli, you cut down on the amount of potatoes you're eating.

    We've also tried barley before and really liked it. For soups, usually I'll just make a small salad as my side item.

  • You can't go wrong with anything on skinnytaste.com.  Her chicken piccata is my favorite dinner - not  favorite diet dinner, just favorite dinner ever.  For sides, we use a lot of those frozen Green Giant veggies (the small ones in the box that serve 2-3) & some Trader Joe's sides (fried rice is my fave).
