vegetarian apps?

Hi ladies....H just informed me some friends/coworkers are coming over Thursday to watch the hockey game....I like to have food when people come over....last time I made chili and then remembered one of the girls is vegetarian, so i whipped up a veggie tray.  I don't think she touched it.

So i am trying to think of something to make that everyone will like, and won't have meat.  Any ideas?

    Yumm... hummus. A pumpernickel loaf with spinach dip is good, so are antojitos. Those are usually vegetarian. Any time I've made them they go so fast.

    but I am a super picky eater, so I want to make sure it is stuff we will eat too, in case she just doesn't snack again....

    H and I both hate hummus, tomatoes, and spinach....and H hates broccoli

    this may be harder than I thought.

  • Oh, even if you don't eat any of that stuff I would still buy it for a guest.  

    But I'm like that.  I had an entire raw bar at my wedding and I don't eat shellfish.

  • I have slowly gotten better (i now try things and will eat finely chopped tomatoes)...but ya...I'm super picky.

    H can't have any dairy either (allergies) sooooo I think I will do multiple things....with the weather being nice, perhaps some fresh fruit is the way to go.

  • Oh I definitely accomodate for guests (our wedding had a bunch of apps we hate, but know others liked) but I am afraid I will be left with a ton of food afterwards, and I don't want it to go to waste.

  • I'm all for fruit, but I think it's kind of lame to pass it off as a meal when everyone else is having chilli.  KWIM?

    Hummus is not really expensive.  I would get some of that with some pita bread.  Add some cheese, maybe some salsa.  Send any extra food  you don't like home with the guests.

  • Oh I am not making chili...thats what I made last time.

    People are coming over for 7:30 (after dinner time in our crowd) so it will just be snacks while we watch the game and have some drinks.  My standard is cheese, crackers and pepperoni, but I was trying to change it up a bit.

    I know this thread is pretty much dead, but if you only have 1 veg guest, then you don't have to prepare tons of a vegetarian app. First, you're sure that they are vegetarian & not vegan, right? Because if you don't like dairy and are looking to make a veg app, then that's basically a vegan app. I'm vegan and will say that a tray of raw veggies or fruit isn't exactly filling or all that appetizing (well, the fruit is). Everyone else has this hearty food & you only get raw veggies? <div>
    </div><div>I highly suggest some of the other PPs suggestions of hummus with pita, olives, crackers or something along those lines. If you only get 1 tub of hummus, there shouldn't be much left at the end of the night because most guests (at least that I've met) like it, so you won't have leftovers. Try to provide something more hearty & filling like that. GL!</div>
