Fish help

I bought some fresh tilapia today on a whim, because I decided we dont eat enough fish. To be quite honest though, I have no idea what to actually do with it. I was thinking just frying them in a pan, seasoned with garlic, some dill and fresh cracked pepper... because I really cant think of much else to do with it.

Does anyone have any suggestions to help me out??

Re: Fish help

  • Oh, I love tilapia.

I heat a skillet with EVOO (I'm so Rachael Ray) and put the fish in once it's heated. I sprinkle lemon pepper, dried basil, dried oregano, garlic powder and onion powder on both sides and take it out when it's done.

It's healthy and delicious. One of my favorite things to cook, because it's easy, easy, easy.
  • I gather this isn't a fish that we have a lot of here... is it a very 'fishy fish' (just to be really descriptive! haha), or more of a mild flavour? Is it a white-meat fish?
  • I like to bread them with bread crumbs, parmesan, some dill and thyme and black pepper and bake them at 500 for about 15 minutes (it sounds like a long time, but as long as you keep an eye on them they should be good).  Or you can make a lemon sauce with butter (I use light Country Crock and it's still delicious), lemon, garlic, dill and pepper, and bake them with that too.  Yum.
  • I actually marinate it for a bit in lemon juice, a smidge of EVOO, dill, garlic and onions.  Then I bake it, and turn the marinade into a sauce with a bit of flour.  Add rice and salad, voila.
  • Its a mild white meat fish sun, I have had it before but only once or twice so im not a pro at cooking it. Im also tackling cooking scallops for the first time (for my husband, who has been whining for some for a while)... thats a whole other story but I think ive got a plan for them.

I actually just found that parmesan recipe! I thought it looked pretty good and I have most of the ingredients. Is it good? (it must be if you always make it)
  • I bake my in the oven with a little smart balance butter on top with garlic and lemon. I cover it in lemon b/c I hate the fishy taste fish has lol.

  • I was thinking rice would be good with it, even though my husband hates rice he gets no say in it! Im also planning to steam some asparagus. I was thinking of breading it, but I forgot to buy breadcrumbs so that idea is out. It sounds basically like lemon (I only have lime, is that ok?), dill, garlic, pepper and onions are generally good with it, so ill probably whip something together with that
  • I guess what you want to make depends on how healthy you want to be.  I mean, if you're eating fish to be healthier, covering it in mayo and cheese or breadcrumbs probably isn't going to fit the bill. :D
  • Lime should be fine.  You're basically just looking for the acid there.
  • Healthy to a point, i suck and havnt eaten anything but a grapefruit and half of my husbands chicken burger today, so I dont think the extra calories are going to kill me.
  • That was hands down one of the best dinners I made in a while - I ended up putting pepper, dill and lime on the fish in the oven and made a creamy dill sauce to go with it (i totally got it from a recipe, I didnt think it up). It tasted delicious. I also stole a scallop from my husband and it was incredible, I dont know why I thought I didnt like them before but I sure do now!
  • For future reference, this is a tilapia recipe I really like. http://recipes.sparkpeople.com/recipe-detail.asp?recipe=75983
