chocolate chip - ounces. Help??

I thought it was a brilliant idea buying chocolate chips instead of normal baking chocolate to make my truffles with. There were only two blocks of chocolate and one was so far back I would have needed a ladder to reach it and there were no tall people in the aisle. The chocolate chips were cheaper too.

Problem, the recipe calls for ounces. How exactly do I figure out the volume of chocolate needed to = a certain amount of ounces? I think i just shot myself in the foot with this brilliant idea.

Does anyone have a suggestion?

  • Well chocolate chips won't melt the same way baking chocolate does, but I'm definitely not an expert on that. That said, I just made cookies, and 12 ounces was right around 2 cups of chips.

  • If you don't have a food scale, I think a typical 11-12 ounce bag of chocolate chips is 2 cups.
  • How many ounces is the bag?  For example, if it's 32 oz. and you need 16 oz., just use half the bag. 
  • Also, I've always used chocolate chips for any recipe that calls for semi-sweet chocolate, like truffles, and had no problems.

    It sounds like 2cups = 12oz for most people then?

    You've melted the chips down ok? I know I've read places that the chips won't melt the same way, so I don't usually substitute, but if they do melt ok then maybe I will in the future, especially if the chips are cheaper.

  • Capri, the bags are all 12oz bags (well... 350g, I had to do the math on that).

    Im glad to hear that hccpsu, i was certain I had read on the internet that chocolate chips could be used in substitution to bars.

  • 8 oz = one cup but since the chips won't fill all of the space in the cup, you need to figure a little less. So 6oz = a cup sounds about right.

  • Sometimes a recipe will call for chocolate with a certain cacao percentage, and in that case, you might want to stick with what the recipe calls for.  But I've never used anything but chocolate chips when a recipe calls for chocolate (if it's going to be melted).

    Is there a taste difference?  I don't know--possibly a gourmet could tell the difference, but I never bake for anyone like that!

  • If its any consolation I bought the best quality of chocolate chips there was, so hopefully theres no big taste difference.

    Good point redhead, I didnt think of that. I have made them before so I know what the consistancy should look like so im sure if its off I can just add a few more to get it right.
  • Nebb, I just finished making my truffles (mocha-cognac and mint). I use 12 ounces (2 cups) of Ghirardelli chips to 2/3 cup (5 3/8 ounces or 152 grams) of heavy cream. They come out nicely every time. There probably won't be a taste difference between the truffles made with bars of chocolate versus the chocolate chips. Might be a slight difference in texture, but not really enough to be noticed.

    I LOVELOVELOVE my baking scale. I rarely measure anything by volume anymore, and I think it is much faster. Certainly more accurate for cakes and such.
