Recipes for a family post-baby

I don't post on here a lot, but y'all always have good recipe advice and I could use some. FI's co-worker's wife just had a baby last week, and his squadron is getting it together so that people are taking meals to them every night for a couple of weeks. 

FI volunteered us for Wednesday night, and I have no idea what to make. It's the parents and the 5-year-old that we'll be cooking for. The parents are both really healthy eaters and super-health conscious (the new mom was running half-marathons into her 8th month). I've been cooking healthy for FI and I, we're trying to get better, but a lot of that cooking is very by the seat of my pants with no set recipe (lots of stir fry and random baked chicken with spices and brown rice or quinoa). The parents told the people at work that they're not picky, but most of the make-and-take recipes or casseroles I have tend to be a little more on the comfort-food side, and I want it to be something they will want to eat. 

I'm thinking that we'll do a big salad and some wheat rolls, but I have no idea for main courses. I would like it to not be too complicated, and be something they could re-heat if I end up sending it to work with FI the day of and him bringing it to them after work (he has a fridge to put it in at work). Ideas? Thanks in advance!

  • Spinach Lasagna roll ups might be good.  They don't have to heat it all up at once, can just cook as many roll ups as they need for that meal. 
  • Stuffed peppers with ground turkey instead of ground beef to make it a little healthier.
  • Thank you! I was actually thinking about a spinach/veggie lasagna, but now gumbo sounds delicious. I may go on a recipe hunt for a few recipes of those. Mmmmmm.

  • If it's not already clear that I'm mexican, it will be after this post.  I vote for enchiladas.  You can make them with wheat tortillas or corn (corn is healthier than flour and i usually go for that over flour anyway) and ground turkey or shredded chicken.  I wouldn't make them spicy though since I'm sure mom can't have really spicy foods if she's breastfeeding, however I don't know if thats a rule.  Using salsa though instead of chili sauce works great.

  • You could grill up some chicken for them to put on top of the salad.

    Veggie chillie! It is chock full of protein if you add enough beans. I like th chop up mushrooms, zucchini, eggplant and bell peppers and throw those in there. It is easy to freeze so they can eat it when you bring it over or save it for another night.

    Southwestern Stuffed Peppers!  I love this recipe.  I use 93% fat free ground beef and it doesn't effect the taste at all.  One thing I might change next time I make it is to add more beef and less rice because 1 cup of white rice uncooked is a heck of a lot of cooked white rice!  This recipe makes 8 halves.  I try to find the biggest peppers possible because you will have a lot to stuff in them!
