XP: Banana Bread Recipe

With Spring here, I wanted to start baking.  Thought I'd share with you ladies!


This is the best banana bread recipe I have ever gotten - so good!  I doubled the recipe and got 2 large loafs.  I'm making another double batch tonight, it's that good.
Banana Bread

1 ¼ C Flour
1 C Sugar
½ tsp. Salt
1 tsp. Baking Soda
½ C Chocolate Chips (optional)

2 Eggs
3 Small mashed bananas (3/4 to 1 C)
¼ C Chopped nuts
½ C Oil

Makes 2 small loaves.


Mix wet ingredients together, add dry ingredients. Fill loaf pans about 2/3 full.
Bake at 350 degrees for 40-50 minutes.


This is not a fussy recipe but I virtually never make this with only fresh banana. If bananas were frozen, thaw them and don't worry about the extra liquid. Then run them through a hand mixer to break up the chunks. The batter should be thick but still pourable; if it’s too wet, add a little more flour or some additional fresh banana.
