what's for dinner?

I need help livening up my dinner cooking.
We're having leftover meatballs and mashed taters. Don't kid yourselves. I make the meanest meatballs around.

  • I'm definitely no help then.  I have no desire to cook elaborate meals for myself, so most of my dinners are out of a box and come in their own dish.  The only thing I've cooked is chicken and frozen pizza.

  • We are having chicken pot pie from the crock pot, except I used cornbread instead of biscuits. Its an experiment. I hope its good.

  • Yours sounds better than mine.  We have some ground beef that needs used up tonight but I have no idea what to make with it.  I have a box of hamburger helper but that's all I can think of!  Ah, I'm no good at this 'coming up with great meals by myself' stuff.
  • I'm falling back on French Onion soup, because it's freaking miserable outside and I've got some gruyere in the fridge that I should use.

    I love meatballs- yum!

    I'm not sure what we're having.  Probably something awesome like Hamburger Helper or tacos.  I'm a really great cook :/  haha

  • Make your own hamburger helper!  You don't need the boxed stuff (unless you like it!  and no judgements here, i get a craving for it everynow and again)

    Canned tomatoes, beef, onion, whatever veg you have going on, some random spices, pasta, cheese... bake!  OR make nachos with it!  Or tacos!  Or taco salad!  Or meatballs!  Or pasketti!

  • Actually this helped, I could make meatballs and mashed potatoes.  I am trying to use whatever we have in the house instead of running to the store after work, and we do have potatoes.  Mind sharing your meatball recipe P2?
  • I have some chorizo and some potatoes left over from seperate meals last week so I am just cooking them together. And maybe some green beans, just to have something green. Not very well thought out, but oh well.

    Cornbread is always a good thing.

    We did roasted chicken in the crock pot yesterday.  Chicken breasts, carrots, potatoes, onion - yum!

  • I used this recipe as a guide and kind of made it up as I went along:


    Mine includes mushrooms and sauteed onions and bell peppers and I used Jiffy cornbbread mix for the topping.

  • Ummm...I made beer macaroni and cheese yesterday...

  • I make my meatballs all day in the slow cooker, that's all. But it'll still do if you can let them simmer for an hour or so?

    1 lb of ground beef
    seasoning (I use onion salt and pepper and worchestershire sauce)

    NO FILLER. Roll in to little balls and either pan fry or bake to cook them.

    Sauce:
    1 cup water
    1 cup ketchup
    1 cup vinegar
    1 cup brown sugar
    3 tbsp soy sauce
    a couple dashes worcestershire
    cornstarch to thicken to your desire.

    Let simmer in a large pot, or crock pot for a few hours (if you can).

  • Sweet thanks!  We don't eat till 7:30-8 when H gets home anyway so I have time tonight. 
  • I have leftover mashed potatoes too.  I was thinking about making croquettes with some other leftover veggies in the refrigerator and an egg.  I don't know what else to do, though.  I don't think leftover Beef Wellington heats up well.  I think I need to go to the store.

  • Frozen bag dinner. Yeah, I know, but it is time to go to the grocery store for us and we have to wait until pay day to do it.
  • She got the keys last wednesday Pumpkin!!  Woo!!!  They're set up already.  Bought new furniture, brough in a painter to do a couple feature walls.

  • I made homemade pasta with chicken piccata. Making your pasta is actually really easy, it's like 4 ingredients and the hardest part is rolling out the dough to the right thinness, which FI has made so much easier cause he got me a pasta machine for early Christmas :D If you need help with planning dinner, I love the website http://allrecipes.com/ you can look up recipes or they have this ingredient search where you type in what you have and it pulls up recipes with what you have on hand and you can save it in your own recipe box. You can spice up your meals! Just try out a couple new recipes a week and if you like them, keep them in the line up.
  • I've been craving winter food, so I've had chicken and dumplings on the stove all day and it smells amazing.  We're about to eat it right now.

  • Mandy I'm so jealous of you having your sister across the street.  One of my aunts (who was my MOH) moved in 2 doors down from my parents when I still lived there and I loved having her family so close.
