I remembered!
Ingredients:
12 lasagna noodles, cooked
4 cups leaf spinach or 10oz frozen spinach(thawed and drained)
2 cups ricotta
1 cup grated mozzarella cheese
1/2 cup parmesan cheese
1 egg
1/4 tsp nutmeg
1 jar (26 oz) marinara
1/2 pound ground beef (optional), cooked
salt and pepper to taste
Directions:
1) Cook lasagna according to package directions, drain
2) Preheat oven to 350
3) Mix spinach, cheeses, egg, and seasonings in large bowl
4) set 1/2 cup pasta sauce aside. mix remaining sauce with ground beef and pour into greased casserole dish
5) To assemble bouquets, spread 2-3 tsp. of cheese mixture onto each noodle and roll up. Place them, seam side down, in casserole dish. Drizzle remaining pasta sauce over each roll.
6) Cover with foil and bake 30 minutes, or until heated through.
