Food Day at work suggestions

Ok, so we're having a food day at work tomorrow, to say goodbye to our boss, who was here for 2 months or so...yeah.  I'm not really feeling too ambitious and have no idea on what to make.  Any suggestions?

Requirements:
Must be somewhat inexpensive
Needs to be able to be prepared tonight
Needs to be able to sit out for most of the day (I can use a crockpot, however)

  • Meatballs in the crock pot?  Those are pretty easy.  I normally just do a bottle of grape jelly and a bottle of heinz chili sauce.

  • Buffalo Chicken Dip
    2 large cans of chicken, drained
    1 container of cream cheese (i use reduced fat)
    8 oz sour cream (i use reduced fat)
    1 packet of powder ranch dip
    Franks hot sauce (use as much or as little as you want, depending how spicy you like it)
    shreded cheddar cheese

    Throw it all in the crock pot and let it melt together - serve with tortilla chips

    Queso.  The answer is always queso.  You can put everything in the crock tonight, and then just turn it on about 20 minutes before lunch and it's ready to go.  And it's super cheap.

  • Ditto the dessert idea.  There are so many delicious and easy-to-make desserts that you can make tonight and just set out tomorrow.

  • 1 box tri-colored rotini, cooked + 1 can stewed tomatoes + about half a bottle of Kraft zesty italian dressing. It's quite literally the easiest pasta salad ever, and I always get a lot of compliments on it.  Plus since it's oil based in can set out without concern.  Put half a bottle of dressing on it tonight and keep it in the fridge covered; then stir it up and add a little more dressing immediately before serving (the pasta soaks up the dressing).
  • I never really thought about making a dessert.

    I really only bake maybe twice a year.  I much prefer cooking over baking.

  • Cookies. Easy, if I make them at home or buy them.

    It's my go to for work events. And, so far I've never given anyone food poisoning with them.

  • I love the buffalo chicken dip. However I used boneless skinless chicken breasts and dice htem myself. I've never used the canned chicken but everyone I've talked to says it gives it a funny taste and that it's much better with fresh chicken. 
  • Queso or meatballs in the crockpot sound perfect. Weenies are good, too. I sometimes just put BBQ sauce over the Little Smokies or use this for something different:

    For 2-3 packages of Little Smokies (adjust if making more or less)
    Approx. 15 oz. Jar Apricot Preserves
    Equal amount of mustard

    Dump it all in crockpot and fire it up.

    </div><div>I always make pasta salad too. Yeah, it's legit just some ziti or whatever you have that looks similar, italian dressing, and then literally whatever you have in the house. Chick peas, black olives, broccoli, cherrry tomatoes, nothing is safe.  </div>

  • My go-to is 5 layer dip.

    Refried beans
    sour cream
    guacamole
    salsa
    shredded cheddar

    Put it in a disposible baking pan or pie plate, and bring a bag of tortilla chips.
