What should I assume?

I hate assuming-I know 90% of the time it leads to being wrong.

So I've been following up with people who never sent in their RSVP's.  I sent a facebook message to 1 of the girls who got right back to me saying that she would be there and bring a date if that was okay.  

I responded saying we were excited she could make it and explaining we only have room for dates who are significant others but if that is your case (and apologizing for not knowing) then we'd be happy to host him as well and to just let me know his name for his escort card.

Not a word back.  3 days later I text her asking if we should still account for a date and asking for his name.  No response.

I finally just called and left a voicemail (hoping it's the same number it's the general recording without her name) and apologized for having to check in again so soon but that I really need to know the final count I'm sending it in tonight and if I don't hear from her today I guess I'll assume she won't be making it either.

Our plates are $140/person.  It's not cheap enough to gamble and hope she shows up.  If I don't hear from her should I just exclude her from the final count?  Or have 1 seat and hope she doesn't bring a date...or 2 seats and really hope they show up so we're not throwing away almost $300?
