Whats everyone up to tonight?

I was supposed to make cookies or roll my truffles today, and neither happened because the faucet my uncle installed turned into an all day affair. That means I get to do both things tomorrow :( I DID manage to put a nice roast in the oven (not a gbck type of roast), and it smells delicious!! Then I plan to tuck in to my big shiny vodka bottle and watch James Franco on SNL later tonight.

  • A friend paid me to make cake balls so I am doing that and making myself low fat/low carb enchiladas. I just bought my friend in my sig pic a camo headband on etsy and I may walk over to their house for a bonfire.

  • I've got twice baked potatoes with cheddar and bacon in the oven and cajun spiced pork chops ready to hit to griddle.

I also was planning on making some goodies today but it looks like chocolate dipped pretzels will be on tomorrow's agenda.
  • Both of your dinners sounds delicious, can I ask how you make your lo fat/lo carb enchiladas ricks??

I was totally thinking this earlier when someone else was talking about making their first roast!

I'm watching TV with the parents, trying to convince myself to work on WR crap, and I need to finish my butter-rum sandwich cookies.
  • I had my calories dont exist night lastnight and ordered pizza for dinner and ate it with a huge salad... calculated my calories and fat for the day and surprisingly didnt go over. I cant be proud of that because I didnt eat lunch. I suck at eating when im home al day :(
  • Butter rum sandwich cookies sounds delicious! God I love food...
  • PS, thanks for reminding me about SNL. I've been looking forward to James Franco and Muse for awhile.

Hopefully I actually get to see it--local stations have been showing nothing but storm coverage since 5 AM. People around here really do not know how to deal.
  • We're at my parents' house, so we went to the gym this morning, and then once my Mom went to work, we didn't have a car, so we just laid around, watching TV.  Tonight we're going to some local holiday show with my parents.

  • I'm trying to organize clothes for packing. I am not looking forward overly much to spending Christmas away from my husband, but it cannot be helped. CryBoth of my girls are excited, in part because they get to fly tomorrow (they both love flying), and because they get to see their father next week. Which means I have to see their father twice next week, too (drop-off and pick-up). My dad says he REALLY doesn't want to see the assh01e, so I need to figure out a "neutral" site for the child exchange.
  • Sure. I just boil a boneless skinless chicken breat in about two inches of water. Then I take the chicken out when it is cooked all the way and shred it using two forks to pull the chicken apart. Then I panfry some onions and green onions in the pan with about a tbsp of olive oil. Then I add the chicken, some cilantro, and about half a packet of taco seasoning with enough water to mix in all together. Then I get two Mission brand low carb tortillas/whole wheat and put the meat mixture into each shell and tuck and roll them. I top them with enchilada sauce (I like a lot of sauce) and bake them in the oven until the shells are crispy on the corners. I top with 2% shredded cheese the last 10 mins of cook time. Oven temp 425 degrees.
You can serve with fat free refried beans if you want.

Sounds like dinner for tomorrow night.  Thanks!  Now I don't have to think.

  • Welll....I am sitting in my bikini on the deck knotting and watching the ocean:)  We jsut took the dogs down to the beach for low tide and they ran around like crazy.  They love the beach so much.  Think I am going to take a nap and then go watch the Cowboys game with H and eat fish tacos.

We tried to go to the Baja Fox Studios today and it was closed....so we had bloody mary's instead.  It is hot today...my car said 79.

  • Raw onions give me a beastly headache every time I eat them, but I love them cooked. Go figure. I would be tempted to add some red or yellow pepper for the flavor, and some yellowy squash or zucchini if I was feeling really virtuous. Doesn't happen as often as it should, but at least I ordered Cobb salad for lunch today instead of the big, fat, juicy burger and fries I really wanted.

So, would it be overly passive-aggressive of me to suggest that I meet the ex-h at my bank, so I can deposit the child support check he has owed since December 1?Innocent

Dang it.  you said the "b" word.  I was scoping out the selection of bikinis at Target today and reminded myself that I need to get to started for next summer.
  • Everyones dinners and snacks sound delicous.  Sascha 79 and a beach sound perfect right now.  We are sitting at 19 degrees waiting for the snow to come...
Today has been so boring and I didn't get anything accomplished.  However FI made grilled cheese and tomato soup before and it was an awesome winter treat!

  • I would rather 19 degrees waiting for snow than what we had today, which was 38 and raining. Ick. 79 sounds pretty nice, though. I'm just sad I won't get to see real snow this winter.
  • Ooh, grilled cheese and tomato soup...I've been craving that for days.

Maybe tomorrow for lunch. Sounds like the perfect thing for a snow day!
  • LOL Sara is is almost xmas, do it!

Sara if you like squash you should try this

    I love it.

  • I will have to try that ricks, that sounds great!!
  • That looks delicious! Neither of my daughters likes winter squash, unless it is in pie form, but I might have to force that one on them. Rule is, if they don't like what is served, they are welcome to fix themselves a PBJ.
  • I might bake. I'm obviously not going anywhere at this point because I'm drunk and my car is under 2 feet of snow.

  • Did you get to visit your friend? How is she doing?
  • Salt, I'm jealous on both counts.
  • And ricks, can I ask: are rum balls classed as cake balls? I've been hearing of cake balls all year on here but it only just registered with me that I have never once seen a cakeball and have no clue what they are.
  • No, some things came up and I couldnt visit her, we talked quite a bit this morning though. She is coming over tomorrow afternoon for cookie making and hanging out. She seems to be doing ok today, just really pissed off.
