XP: Cake for us, dessert for them?

So my catering package includes 3 desserts (fruit salad, ice cream and mango/pineapple cheesecake). Neither FI nor I is very big on sweets or cake. While I do like the idea of cake-cutting in photos, for budgetary reasons I wouldn't mind skipping it altogether. My mom, who of course is not contributing to this cake, insists my wedding will be utterly tacky without one.

I thought about using the cheesecake already included in our catering package as a cake we'd cut but the caterer insists that his desserts are not presentation-style and suggested just getting a one-tier cake (from a separate baker) to cut for ourselves and feed our 50 guests the regular dessert. Is this rude? Would you be offended if you weren't offered any of the wedding cake, even with other options available?

ETA: I realize it's a little early to be thinking about cake, however I'm having a destination wedding and my event planner has consolidated all of my vendors onto one invoice, so I'll need to consider whether I'm adding a bakery to my vendors in coordinating my payment schedule.
