Who has a good guac recipie?

  • My friend combines avocado, lime juice and cream cheese to make the best avocado dip ever. It's not quite guacamole, but it's awesome nonetheless.

  • LVB, you can totally just buy a side of guac from Chipotle.  Don't know how much you need, you might have to buy multiple sides.

  • If you can get good avocados, it's really just smashed up avocados, a little shallot or red onion, some diced tomatoes, cilantro, jalapeno, lime and salt.  You can add a dash of cumin, if you like.

  • For whatever reason, everything I make using cumin ends up tasting like Tussin.

  • I'm not a huge cumin fan either, but I think a lot of those guac mixes have it in there, so some people expect it in their guac.
  • Do you mash it up, put it in the blender, or what?

  • Just mash it with a fork or something.

    Garlic salt is a must for any guac recipe.

    Use shallots instead of onion. It's a little less intense.

    I don't put tomato in mine.

    1 large or two small shallots
    juice of 1 lime
    1 jalepeno or serrano pepper, seeded
    1 clove of garlic
    about 1/4 teaspoon of salt, or to taste
    handful of cilantro
    2-3 avocados, perfectly ripe.

    I throw everything but the avocado into the blender or food processor and pulse until it's all chopped up. Then I scoop the avocado into the mixture and cut it together - I like chunks of avocado, nothing too smooth.

  • I use kosher salt--it definitely gives it that extra something that it needs. I have a great recipe from a book we got at Rosa Mexicana ( NYC and DC locations anyone?) but I don't know it off hand. PM me if you want me to check on it later...

  • This is the BEST guac recipe, H raves about it and says that its better than most restaurants.

    Avocado
    Red onion, diced small
    jalepeno, diced small
    lime juice
    fresh cilantro, minced
    kosher salt.

    mash up the avocado, add other ingredients to taste. You don't need much jalepeno or onion, imo.
  • Guac is the easiest thing to make at home.  Here's a super awesome recipe.  It's authentic from my messican friend.  Where she's from they don't mash the avos they cube them...

    Ingredients:
    3-6 Hass avocadoes (place in a paper bag to ripen for a few days if they are hard, until they barely yield to the touch)

    2-4 Medium size ripe tomatoes
    1-2 Serrano peppers or substitute with fresh jalapeño pepper
    ¼ - ½ cup minced white mild tasting Spanish onion.
    ¼ - ½ cup chopped fresh cilantro
    1-2 juicy limes
    Salt to taste.

    Method:
    Use either the first or the second amount of ingredients depending on if you are using 3 or 6 avocadoes.
    Add to serving bowl without stirring between additions.
    Chopped tomatoes
    Minced Serrano or jalapeño
    Minced white onion
    Chopped cilantro
    Avocadoes are cut in half lengthwise, pit removed, and fleshed removed from the peel with a teaspoon for a more rustic look, or alternately peeled then chopped in about ½ inch pieces.

    Add the lime juice, if the limes are scant on juice, use double the amount of limes.
    Salt
    Stir all ingredients together gently.
     
    Taste and make adjustments for salt, or lime juice if necessary.

     This guacamole is not mashed; it is delicious because you can enjoy each of the individual flavours, and you can see all the vibrant colours in it.  Enjoy!
