Menu Picking w/Venetian

Here is my step by step meeting with the Venetian to pick out menus, linens, etc.  Sorry, it is super long, but I am very excited so I just kept typing!Everything went great--I met with Denisa (sp) who was super nice.  They had a pretty good selection of linens (at least I thought, not that I have anything to compare it to)  They had one page of fancy linens which were all in the white/ivory/cream color wheel, then they have another page of plain (not patterned) linens in tons of colors.  Each can come in a table clothe and napkin.Then we did cocktail hour choices--they gave us a print out that really lists it all out.  Their book/catalog does not have everything listed (I still don't even think they have a new version of it made with the new room photos).  Just the typical stuff they tell you that you have a choice on, pasta, carving, etc.  I was happy with the options and the Denisa was very helpful with this (like she suggested not to do the beef option at the carving station because there was hand passed filet anyway...things like that).The appetizer is a duet (salad and appetizer), which is good because it saves time (our band had suggested we ask them to do that if they did not offer)  It was nice because they had a photo of each one so you can pick by the food itself  and the "look" (other places may very well do this and would have no idea, but I was happy about it!) --then intermezzo (lemon, raspberry, mango)...and then the dinner.  They said the beef they do is a filet so they didn't really give us an option right out, I got the feeling they would work with you if you REALLY didn't want that, but I was fine with it.  Then they had 2 fish they offered prepared a bunch of ways (salmon, swordfish, or both).  And then a bunch of chicken dishes to pick from.  I was pleased with everything they offered for the dinner, I definitely never got the feeling of "oh no, I don't like any of those choices!"Then ice sculptures, 2--1 for the vodka cavier (we did the typical martini glass one) and then one for the raw bar.  They had a book we looked through, but we have not decided yet.  I told her what I was thinking and she said to send her a picture so I think they will do whatever you want (within reason).Then cake...we have been working right with petit cafe with this...but she did say that 5 years ago, you pretty much could have had any cake you wanted without paying extra..but ever since all the cake shows popped up, the cost has skyrocketed. (Darn you Ace of Cakes!!)  One thing I wanted to know was whether they would cut the cake and be willing to put each slice in boxes/cake bags.  Because we are doing the Viennese, I doubt anyone will really eat the cake, so as part of our favor, we are packing the cake to go. (and yes they will)hmmm, what else...basically, it was the food/linens...talked about whether we are printing our own menus/escort cards or using theirs (we are using theirs) and then they have checklists, seating chart, etc. for you to fill out (and they need it back i think 10 days before)--the check list had things like bathroom baskets, favors, etc etc.I am sure I am forgetting tons, so feel free if you have any questions to ask me.  But overall it was a fun, easy and painless process!OHH and one thing I liked is that they get all of your vendor info so if there is an issue, say with the flowers being late, they don't call YOU, they go straight to the vendor.Hope it helps...I'm so excited!  My date is getting so close!!  (now I must go google image ice sculptures!)

    WEEE! Very detailed. You answered lots of my questions! I do have one though. What were examples of the chicken dishes. Oh and regarding the ice sculptures. They actually gave us three because my Fi asked if they could do one of him in his "pose" and they actually said yes. No....Im not kidding!!!LOL

    For the chicken they do them all as a french cut, which, as she explained it means they leave like..some of wing bone in for presentation (aka, not a chicken cutlet).  I think there were 3 choices...one was plain herb roasted chicken, and the other 2 were stuffed...one with asiago cheese and I want to say spinach? and the 2nd which we picked was stuffed with mozzarella, prosciutto and sun dried tomatoes.Funny about you fiance shaped ice sculpture!  That's really funny, I hope you hold them to it!!

    Cool, glad to hear this! I'm surprised there are only 2 fish options but what are you gonna do.. It sounds like everything went great. I'm really excited for you that your date is so soon!

    well...it was 2 fish, but each one could be prepared I think at least 3 ways...and then there was an option for a mixed grill for both.Not sure how consistent the menus is over the year...may change depending on the season? not sure--or maybe if I had said, I don't like any of these, there would be more options.

    I was surprised about the 2 fish choices as well. I am NOT a fish eater at all, as a matter of fact I detest fish. My way of choosing will go like this.."which one does not smell?  Ok that's the one we want"  I have a feeling the fish may be popular though since we're getting married on a Friday during lent

    I almost always eat the filet at weddings but sometimes I'm in a fish mood. I'm just a little bummed it may only be 2 options.  I guess I will have to see what looks the best for guests.

    I had gotten married at The Venetian 2 years ago....they offered salmon and swordfish on the menu choices, but we actually ask them for sea bass, and they said ok. I knew a few years before they offered sea bass, but I think they removed it on the menu choices because it's a more expensive fish.It wouldn't hurt to ask them if you can have a different fish if you prefer. HTH!

    We had a very similarly positive experience when we picked our linens/menu.  We met with and have been working with Chris. As for fish - they offered swordfish or seabass - prepped a number of different ways.  We discussed this for a long time...lol...and went with seabass in the end!

    I'm so happy to hear everything went well.  We've worked with Carlos so far and as far as he said we will the remainder of the planning.  He's been great.  So nice each time we've been there and very patient with us, and our large family.As far as the dinner choices, filet is generally the best cut anyway so i'm not sure why you would want to downgrade to another option. For the fish and chicken choices, he told us basically any chicken choice we could think of we could have, and same for any fish, as long as the cost of the fish that season is comparable to the cost of their choices.

    A little off topic, but Im wondering what your experiences were with ToniAnn? I havent had any dealings with her at all, I booked with Jimmy Silva. Someone recently told me that ToniAnn was the single reason they did NOT book with The Venetian. Apparently when they called to schedule an appt. she was very condescending, (according to whom I spoke with) and basically told them to go to Seasons "but I guess you can come in anyway if you want" sort of deal. They are having the same approx. minimum and budget I'm having so I dont really understand why she directed them to Seasons if they were specifically inquiring about The Venetian?

     the reason I booked there was because I fell in love with the new room...not due to any amazing sales skills.She was nice to me, but she making bad comments about other venues which I didn't like

    Yea that new room is absolutely amazingly beautiful. Our reception is in the Grand Ballroom though. We had no desire to even try and make the minimum for that room. We were working on getting our minimum down not up!! lol

    what did they tell you the minimum for palazzo room was? i feel like i've heard varying things.  i would agree with bmpro, sales didn't do anything either way for me, i fell in love with the room.  i did get along well with toniann and liked her alot.

    I was told 250 was the minimum. Even if we had gotten them down at all I KNOW it wouldnt have been down to the 150 we were looking for! lol

    The minimum for 2009 and 2010 was different.  I forget, but it was either 200 or 250 (we paid for a min. of 265).It was a little different for me because I have only had a 9 month engagement and we picked one of the last dates in the palazzo room for 2009--i think they wanted to get rid of it

    ok cool! my mom swore she heard they increased the minimum.  she swore someone called recently and they were told 400! that's why i was wondering lol

    I've also heard that they up'ed their minimum for that room.  We booked way back when there was barely a room so we got a min of 225.  And being as there was hardly a room to look at, we really booked based on the sales experience...we just really clicked with Chris - and we all got a really good vibe with him.  It was one of those things where it just felt right.
