Healthy Recipe Ideas

Hey lovely ladies, hope your day is going well!

I'm just wondering if anyone has any yummy recipe ideas for a girl who is deserately trying to stay on a diet (me, or course) :0)  I have my usual lunches and dinners, but I seem to run out of things to cook so quickly.
(any crockpot ones would be fabulous, since it requires less of my effort and time)

    DH and I make this often, however I usually include chicken instead of salmon (I'm just not a seafood eater)

    I have a huge document of Weight Watcher crockpot recipes. I'll send them your way in a few minutes.

    I've tried a few and so far all of them have been good!

    For lunch I do this and sort of put whatever quantity of each I'm in the mood for.  It's very filling.
    Pasta (could be whatever kind you like)
    1 red pepper diced up
    1 cucumber diced
    grape tomatoes
    kalamata olives
    tuna
    feta cheese
    balsamic vinaigrette

    For dinner I use this Cooking Light recipe for Orzo with Roasted Shrimp & Tomatoes
    Cook orzo according to package.
    On a sheet pan combine tomatoes, olive oil, salt & pepper
    Put in preheated 350 degree oven for 10 minutes, till they are about to burst
    Then put shrimp (tossed in olive oil, salt & pepper) on the sheet pan with tomatoes for 5 more minutes in the oven.
    Combine with orzo and enjoy

    Sometimes I'll add some lemon juice to the orzo either while cooking or right before serving.  As well as some mozzarella cheese or feta before serving.  And maybe some kalamata olives.  Also really good served cold for lunch.

    I make some baked onion rings that are delicious. 

    1 medium onion
    egg beaters
    bread crumbs

    preheat the oven to 350 degrees.  Cut the onion and separate  them into rings.  Dip each into the egg beaters and then into the bread crumbs.  Bake on a cookie sheet for about 20 minutes, flipping them after 10 minutes.  I usually eat them with some sort of protein. 

    If you can, get the hungry girl cookbooks or look at her recipes online.  Great ideas and very easy and quick.
