Personally, I don't like having extra things just because they take people off the dance floor and we're paying for a DJ.  But here are some ideas... photo booth, cigar rollers, performers of some type like a dance troupe or some type of cultural dance group related to your culture or FI's culture, a midnight snack bar with milk and cookies for guests (or even just comfort foods like mini milkshakes, mini grilled cheese sandwiches, fries, etc.), or a caricaturist (we had one at my grandmother's 70th birthday and it was a hit).

I saw something similar last summer, it was called a funbooth and it fit upto 6 people and they provided a trunk full of silly stuff that made it so much fun.

I was able to dig up some pictures for ya:

    Enjoy

we hired a ciger roller for cocktail hr and i thought it would add a nice touch during that 1 hr period where the dancing didnt start yet....

I think a cigar roller would be a nice idea! All the men usually like to smoke cigars when they are celebrating something. I think that your fiance and his friends would enjoy that!

We're trying to keep a lid on costs but want to do some nice things like this, too.  We did splurge a little bit on desert tables and options.  Instead of the cost of a cigar roller, we're also setting up what we're calling a cigar bar outside.  My dad is picking up a broad collection of preimum cigars which we'll set up outside on a table along with all the little details like cutters, etc.  And even match books that we're having done with our name and date.  Maybe less of a show, but it should be very nice and at a lower cost.

I was a guest at a wedding where they hired someone to make zeopples during dessert and it was a big hit.

xoxo14- I love the fresh mozzarella idea! So fun! Will it be at cocktail hour? My family would have loved that!

There is a guy at my cocktail hour making fresh mozz as well, but it came included with my venue! We are going with 5 hrs photobooth but are having it closed during formalities and keeping it in cocktail/lobby area, so up to the guests to either use it during cocktail hr or go outside the ballroom to use it, this way its fun but not distracting! We are also bringing props for them to use (boa, chalkboard, glasses, etc.). We are going all out with vieneese hr with a flame show as well. I went to a wedding with cigar roller and it was a cute idea but not something that jumps out to me personally.
I love Peaches idea of comfort foods, we went to a wedding and someone had an after party at the hotel and during that time, they had fries and milkshakes and sliders, it was great!!!!!
