How to Choose an Officiant?

Okay, so my fiance is catholic and i'm lutheran.....we're getting married at a country club, and I know that he went to a catholic church and catholic school so I'm not opposed to being married by a catholic priest but a) would they do it if it wasn't in a church and b) would they do it knowing i'm not catholic? I don't want to convert. I want to incorporate something that would be very special for him and the catholic priest I had in mind played a huge part in his childhood because he went to the catholic school where this individual preached. I want to suprise him with it but I'm concerned about whether they'd do it? We had decided to do nondenominational at first because of the difference in religions. He hasn't wanted to put too much input into the wedding other than having the groomsmen wear batman villian costumes which is NOT going to happen so I want to make sure his upbringing is involved in the ceremony. What do you think?
