    I finally forced myself out of bed at 8:40.

    2.What was the most recent thing on your mind?
    My meeting with my boss this afternoon.

    3. What is your favorite book?
    I really love to read, so that is an extremely hard question to answer.  If I had to choose just one, I would have to say A Prayer for Owen Meany by John Irving.

    4. Are you going to do anything special for your Negative 1 Year Anniversary?
    Hmm, probably not.  Maybe a glass of wine?

    10am! I closed last night so slept in a bit after FI left for work

    2.What was the most recent thing on your mind?
    Getting some errands done (returning some things to the store, bank) and done! now to workout and head into work late!

    3. What is your favorite book?
    Anything by Lauren Weisberger

    4. Are you going to do anything special for your Negative 1 Year Anniversary?
    It is out anniversary as well so FI said he has a surprise for me; we've talked about going ot the beach where we had our first weekend away and I want to surprise him with a massage/facial!

    Turkey Kielbasa + corn
    Sounds weird but sautee sliced turkey kielbasa and then add in a sprinkle of salt, pepper, and soysauce + a can of creamed corn and a can of kernel corn (both no salt added) and enjoy after 10 minute, super quick and easy!

    Gone with the Wind is my fave, and I like the Twilight books too

    Haven't decided yet- We'll probably go out to eat or I might just cook a special dinner for FI

    'Healthy' Potato Salad RecipeMakes: 6 servings
    Ingredients
    4 medium potatoes (about 1 1/3 pounds)
    2/3 cup low-fat mayonnaise
    1 stalk celery, thinly sliced (1/2 cup)
    1 teaspoon cider vinegar
    1/4 teaspoon salt
    1/4 teaspoon black pepper
    1 (or 2) hard-cooked eggs, coarsely chopped
    Directions
    1. Wash potatoes and cut into 1-inch cubes, leaving skin on. In a covered saucepan, boil potatoes in enough water to cover for 20 to 25 minutes or until just tender. Drain well.2. In a large bowl, combine mayonnaise, celery, vinegar, salt, and black pepper.3. Add potatoes and egg to mayonnaise mixture. Toss lightly to mix. Cover and chill in the fridge at least 6 hours (or up to 24).

    Nutrition facts (per 1/2-cup serving): 131 calories, 3g protein, 25g carbohydrate, 3g fat (0g saturated), 2g fiber

    4. Are you going to do anything special for your Negative 1 Year Anniversary? maybe dinner on the day of, our engagement pics are two days after, so that will be fun!
    5. Share a yummy recipe for the week! I made greek pitas this weekend... marinated chicken in lemon and pepper marinade, cooked it up and chopped it up, and mixed it with red onion, lettuce, feta cheese and tzadziki sauce. yum!

    2.What was the most recent thing on your mind? Quitting my part time job and only working my full time one.

    3. What is your favorite book? Hitchhiker's Guide to the Galaxy by Douglas Adams

    4. Are you going to do anything special for your Negative 1 Year Anniversary? Probably go to dinner because it's in the middle of the week, but it's also our dating anniversary so we are going to do something.

    5. Share a yummy recipe for the week! We just call it Parmesean Chicken, but I think it has a longer name. Cut chicken breast in half, stuff it with Kraft Italian Blend Shredded Cheese, crust the top with Grated Parmesean Cheese, bake at 400 degrees for 20 minutes. I usually make it with Mac and Cheese and Green beans for the sides. It's FI's favorite.

    Honey Nut cheerios (add 1/2 c skim milk)  Set spoon in bowl, lift to mouth & yum

    4. Are you going to do anything special for your Negative 1 Year Anniversary? I was thinking we'd go out to eat but it's the same day as a local monthly festival downtown, so we might just stay in.
    5. Share a yummy recipe for the week! yesterday for breakfast I sauted some portobella mushrooms then added a scrambled egg, a link of precooked turkey bacon and some parmesean cheese. Then I put it on a grilled english muffin, it was pretty tasty!

    you need large casssorole dish
    potatoes
    yams
    carrots
    olive oil
    salt and lemon pepper
     zucchini
    red onions
    few tablespoons of breadcrumbs
    a cup to two cups of parmesian cheese
    small bowl
    tin foil


    preheat oven to 400

    dice potatoes and yams slice carrots layer in cassorole dish in that order sprinkle with olive oil salt and lemon pepper

    slice zuccini and red onions and put zucchini then onions ontop of whats already in cassorole dish
    sprinkle with olive oil salt and lemon pepper

    in small bowl mix bread crumbs and parmesan cheese
    sprinkle on top cover with tin foil
    bake for roughly 40 minutes or untill all veggies are soft leaving foil off for last ten minutes
