So I have both a matron and a maid of honor... which signs as one of the witnesses? Or can there be more than two?

It depends on your state but i think usually it's just 2 witnesses, so unless you don't want the best man to sign, you should just pick one, or have family members sign.

In our state it was whoever we wanted over the age of 18. We had my cousin and DH's sister. Neither of them were in the WP.

Check with your state... Nobody signs in my state other than the minister.

I had two MOHs too.  My sister signed the license, but prior to that my other MOH met my H and I at the clerk's office to serve as our witness.  So in a way, I had both sign.  Maybe something like that could work for you, if you are having a tough time choosing.

In my state, it's two people. If I had 2 MsOH, I would probably ask my mom to sign or something.
