NER Morning After Brunch Menu

Hi ladies! FI and I are hosting an open house brunch for our immediate family and OOT guests the morning after our wedding. Can you please help me with a no fuss menu? This is what I'm thinking so far..

French toast bake- my mom makes this, going to try freezing and unthawing. 
Muffins & donuts from DD. 
Fruit salad
Yogurt & granola
Vegetarian & non veg quiche
Bacon & sausage 
Mimosas, juice, coffee & tea

What am I missing? It will be open house, but we're expecting around 30 people. Bonus points if you leave recipes!

    Seriously though, you need some sort of protein.


    ETA: I just saw the bonus points. Open package, cook in skillet until it's awesome.

    Oops, add bacon and sausage to the list... I don't eat it so I forgot :)

    Can I sub for quiche? I'm really trying to not be over the stove so we can visit with people. Anyone know if you can freeze it?
  • my FI would say thats a breakfast food! definietly...i have no clue about freezing it..but i bet costco has some pre made!!

  • The kitchen I used to work in would freeze it! It tasted fine afterwards.

  • I would suggest some sort of breakfast casserole or 2.  You could probably make and freeze ahead of time or make and then pop in the oven in the morning.


    If you look on pinterest there are also a number of crockpot egg casseroles that take about 10 hours to cook.  

    Another option would be to make egg "muffins" and freeze and reheat
    tons of different combinations

  • Since you already have a fruit salad, what about a few extra ingredients for a yogurt parfait bar? Yogurt and granola added with the fruit would be simple and delicious!
  • I don't eat ham but you could do hot ham and rolls. Otherwise I think a breakfast casserole in a crockpot. I've done that for Easter brunch, people love it and it's easy.

    Plug in the crockpot when you go to bed the night before (or have a family member if you're busy ;) )

    Ready to go in the morning and fresh!

  • Misssunshine, aren't you near Philly? If you have a wegmans near you, I know that they sell pre-made quiches.  And then you can just heat up your egg options.

  • I wouldn't mess around with bacon and sausage TBH. It's kind of a PITA to keep this stuff hot and takes constant effort to keep it fresh. I think the crock pot/breakfast casserole can satisfy the savory seekers without any fuss. 

    No fuss option = bagels w/ cream cheese (you could include lox for more no fuss protein/a savory item)

    If the OP is not from NY I would pass...just saying cause I grew up on Long Island and then moved out to Central PA.  The bagels (and pizza) in NY are A-mazing but anywhere else it is just lacking.  But its still not a bad idea! HAHA
  • Everything you have sounds fine. Just remember, the easiest breakfast food is bagels. Get a variety of bagels and have butter and different flavors of cream cheese and you can't go wrong.

    What a nice thing you're doing, hosting your family the morning after! :)  I love your ideas for Dunkin Donuts and a fruit salad!

    Although others have suggested it, I'd shy away from bacon or sausage.  No, not because I don't eat meat myself but because both get kind of greasy while cooking, it's tough to keep the kitchen clean while making those two.  If you want your guests to have meat, try Trader Joe's, they have an expansive frozen food aisle with lots of breakfast options, they might have quiches with ham or bacon in them already.

    As a New Yorker, I have to say that a large spread of bagels and cream cheese is always a no-fuss way to go.  And on my sister's wedding day, to go with the "getting ready at the house" spread, I poured champagne into an ice cube tray to make these adorable champagne ice cubes, so that her other bridesmaids could enjoy mimosas without regular ice watering them down.  Good luck and enjoy!

     

  • My MIL made a french toast bake and froze it for the day after. It ended up being super watery after it thawed out, so I would suggest skipping it. Thankfully we had plenty of other foods - bagels, breakfast casserole, yogurt parfait, cereal and leftover cake :) Everything else sounds awesome!
