Help with apps please

I am serving BBQ and fried chicken at my reception.  It is outdoors in the summer at an old plantation house.  Does anyone have any ideas for appetizers that would go with the meal and also not be destroyed by the heat?  Thanks for the ideas ladies!

    Fried corn bread?  Fried mac and cheese balls?  Fried catfish fingers?  On the healthier side, I always appreciate cut up veggies, and you could have ranch dip or a southwest dip.

    One other idea is corn fritters.  Weddings aren't supposed to be health, right?

    -Green bean salad -Slaw -Small cups of red beans and rice -Watermelon -Cold soups like gazpacho -Tomato, mozz and basil salad -Mini BLT sandwiches -Creole crabcakes with remoulade sauce -Hushpuppies I also think it would be fun to have a New Orleans shaved ice station, especially if it will be hot out!!!

    We are having this on skewers.  I got the idea from a bride on another website, and I love it.  FI and I really like fresh mozz, and the skewers should be easier to eat at cocktail hour than salad off a plate.
