Talk to me about what you've cooked lately.

I'm trying to plan out our meals for this week and I'm totally drawing a blank.  The sales papers aren't very inspiring, it's all stuff we already have in the freezer.  

So.  Tell me about something you've had/cooked lately that's been particularly good.  Please.

  • Last night H marinated 3 tilapia fillets in fine red wine vinegar, pomegranate-infused red wine vinegar, and balsamic vinegarette. he said they were all awesome.

    Recently, I've made:
    Hawaiian Pizza (pizza with BBQ sauce, pineapple, and Canadian bacon)
    Pasta with Roasted Red Pepper Sauce (rotini with garlic and pureed roasted red ppers)
    Chili Con Carne (chili with ground beef and beans)

    I can give you the receipes tonight if you're interested.
  • I've got pheasant going into the crockpot right now. (can make it with chicken)  I just throw some stock in, a packaged to diced up mushrooms, salt, pepper, a sprinkle of paprika, and a dollop of sour cream and let that cook all day.  I'll serve it tonight on top of rice with a big veg side.
  • We had chicken and dumplings last week.  I usually make chicken pot pie, but tried this instead.  I think pot pie is easier to make.

    LHT, I have everything to make both of those, except the zucchini.  Maybe we need to just eat out of the freezer/pantry for a couple days.

    Yes, please for recipes, Sesh.  Especially the Chili Con Carne, yum.  

    I love that you're cooking pheasant, Anna.  I'm not a big chicken fan, so I'll often sub a different poultry.

  • I am kinda useless because I don't use recipes often. Yesterday I made the filling for stuffed peppers (ground lamb, beef, pork, and turkey, crushed tomatoes, tomato sauce, sauted peppers and onions, kale and lots of quinoa) and spaghetti sauce (same as stuffing for the peppers minus the kale and the quinoa) and used half of that sauce to make a spaghetti squash bake, which was really just the sauce, the squash, and lots of goat cheese and Parmesan cheese all mixed together and baked. The other thing I made is my new favorite 'side dish' made up of a little bit of mashed potato, more mashed cauliflower, chopped up spinach, Broccolini, and asparagus and mixed up with cheese and then baked. We get our green veggies in and I get yummyness too Thats what I made yesterday!
  • Last night I made some soup.  I'd call it Butternut Squash, but there was probably more other than squash.  (I added sweet potato, red onion and yellow flesh potatoes too)

    Tonight for dinner is Creamy, Light Mac and Cheese.  I love love love this and make it ever other week, if not once a week.

  • This pretty much settles it.  No grocery shopping for me today.  Y'all have great ideas.  I need to pull some stuff out of the freezer.

  • The past few days, we've just been making reservations.

    But I'm planning on this for the week:

    Chicken parm with penne, asparagus on the side (because I didn't make it the other day)
    Ham steaks with baked potatoes and green beans
    Some kind of burger with green bean casserole
    Angel hair pasta, tossed with basil, sauteed garlic, and grape tomatoes in EVOO

    And one night I'm going out for drinks, so that will be leftover night.

    It is super duper tasty.  And, come on, there's squash!!  I usually sub old cheddar for the Gruyere because they apparently only sell processed gruyere at my grocery store.

  • I stole this from CCF's FB, but omg it's so good. I would halve everything for the sauce though because it makes a ton of sauce. I didn't have corn flakes at the time so I used instant potato flakes instead, it was tasty.

  • I found out last night that H doesn't really care for mac n cheese. It made me a little sad because how can you not like mac n cheese?

    However, I do have a mac n cheese and ham recipe that I will continue to make regardless, because it's delicious and there is no way he doesn't like that.

  • omg, mac and cheese is one of my favourite things ever. Initially I only liked kraft dinner but then I made lobster mac and cheese from scratch (using an actual recipe) and now I love all mac and cheese. Any mac and cheese. It is so on my comfort food list.  The list includes:

    mac and cheese
    shepherd's pie (or cottage pie)
    tomato soup with grilled cheese and a pickle
    beef Bourgignon
    oatmeal
    tuna sandwiches

  • Buffalo Chicken PIzza - we had just got a bunch of crap from Costco and they'd sold us on some hot sauce and canned chicken based on a delicious sample, so when we got home we made the dip and then added it to a pizza crust and put some cheese on top.

    It was freakin' delicious.

  • Nates, I hated stufed peppers too until I used quinoa. I hate rice that isn't sticky rice so regular ones grossed me out. Now I am in love.

    I LOVE stuffed peppers, but N isn't a fan at all, so I never make them. I'm on a quest now to find good recipes so he'll change his mind.

    I've never made quinoa. I'm a little afraid of it. It's easy?
