Happy Christmas Eve/Good Saturday Morning!

Mornin', Ladies!

Is everyone finally done with their holiday shopping and wrapping everything up? What do you have planned for the day?

We will be cleaning up from all of the house projects we've been working on before my mom comes over tonight. D put in a new kitchen faucet last night. It's so much better than the one that was there. It's not exactly what we wanted, but my mom gave it to us, so at least it was free. Who knew faucet's cost so much? We will upgrade it later once we replace the sink. Buy, for now, it's great.

Also going to do some desserts today to bring to my grandparent's tomorrow. Hawaiian sweet potato coconut pie (shout out to all the Hawaii brides!), salted caramel chocolate cookies and almond rocha bars. So not Paleo. But like I said before, I'm fully cheating tomorrow!

Once my mom gets here, we are opening presents, having dinner, going to see the lights on peacock lane and will probably play a few board games. Lots going on today! Should be fun!

Hope you all have a great Christmas eve and Saturday!

  • Kimmy - The desserts sound wonderful!

I'm heading to my parents to finish wrapping a three last gifts.  I'll probably help mom make a few things for dinner tonight and tomorrow.  Then we're meeting FI down at my grandfathers to have dinner and open presents.  Hopefully no one says anything too outrageous tonight or I may not be able to hold my tongue!

  • Merry Christmas Everyone!
I just came back from Target and spent waaay more money than I wanted to. I have to finish wrapping a couple of presents and then clean the house. FI is working today :( Tomorrow we are cooking at home and going to a movie (FI's tradition on Xmas day), Unfortunately we couldn't go spend the holidays with his family this year, so it's just the two of us and the dog (we could go to friends houses but we decided to just chill at home). My family is in Brazil, so I'm used to being away from them, even though I miss them very much!

Right now we have FIs son and we are waiting til 3 for my dtr to come home from work and then he will open his gifts. We only have him for 3.5 hrs cause his mom is a piece of work too! I hope everyone has safe travels today and tomorrow!

  • Everyone is making such yummy things, I'm jealous!

Kimmy, will you send me the recipe for almond rocha, please?  I might surprise FI with some waffles in the morning, thanks to Jen.

We just finished cleaning in preparations of FI's parents tomorrow.  I personally don't see the reason behind this, they're going to complain regardless, but it makes FI happy.  I realized that tomorrow is 111 days until we get married and I've been bouncing off the wall all day, FI things it's adorable and just laughs.  He said that on 100 he's going to have to sedate me.

With Christmas tomorrow and all the drama wedding and holidays bring I just want to say that I am truly blessed and so lucky to have all of you in my life.  You make me feel so special and loved.  Thank you and merry Christmas!!!
  • Lindsey good luck tomorrow, just enjoy yourself! Have some bloody marys with those waffles, then you'll definitely enjoy yourself!!!

<div>I just make shortbread, press it into a pan, mix brown sugar and melted butter together, pour it on top of the shortbread, bake for 16 minutes at 350, let it cool for a minute and cover it with chopped up almond rocha.  The whole thing will make one huge bar that you can easily lift out of the pan once it's cooled. Put it on your cutting board and cut into bars.  </div>
  • Merry Christmas everyone!

We had 20 people at our house yesterday! Surprisingly my house did not look like a stampede had gone through. This year the fiance and I opted not to exchange gifts- this is big because we always go all out when it comes to gift giving. While I love his gifts, my only thought was "He asked me to marry him, I don't want anything else but for the wedding to get here!" and he certainly can't move time any faster no matter how hard he tries. But I have really enjoyed just visiting (and eating!) with all of our family. I've really felt blessed this year with all my family and friends. Even through the stress at work and the end of the semester, I couldn't be more happy.

Now I'm off to enjoy 2 weeks of no work and trying out some new recipes for dinner (since there is plenty of time). Hope you all had a wonderful Christmas!
