Favorite meat dish?

I think I'm making H a special dinner tonight and all I have figured out yet are roasted garlic mashed potatos and homemade rolls.

So, meats and/or veggies? We like pretty much everything, but we don't have a grill.

Re: Favorite meat dish?

• You can do steak in the kitchen. Just season, sear on both sides, and finish in the oven.

I've bought the little bacon-wrapped filets before, and just cooked them per the instructions above, and they come out fine.

Or you could marinate some chicken and do it the same way. It would cook longer than the steak, of course.
• How about stuffed chicken breast? You can stuff them with something like cheese, spinach, artichokes or garlic?
• I'm having steak tonight......so of course that's my vote!
• H is currently obsessed with pork tenderloin. We've probably had it 3 times in the last 2 weeks - and then we've had leftovers lol. He likes to get a tenderloin and marinate it in KC Masterpiece's "Caribbean Jerk" sauce and throw it in the oven. It's pretty darn tasty =)

• Also, if I bake chicken breast I like to put a bit of chicken broth in a casserole dish with the chicken to keep them moist (ew i hate that word). Sometimes I"ll throw some veggies in the dish as well so they soak up the broth while they're cooking. Mrs. Dash veggie spices are good!

LOL I've never tried it before, but I've read about it. I think you just cut a sliver into the chicken, mix the stuffing together and then just shove it in. If you want to go this route I would look up a stuffed chicken recipe on allrecipes.com.
• Pot roast. Throw it in the crockpot with some seasonings, beggies, and cook for about 6 hours. Yummm!
In Response to Re: Favorite meat dish? : It's not too hard to make stuffed chicken breast. Just take a regular breast and pound it out with a meat mallet until it's about 1" thick. I stuff mine with goat cheese, spinach, and pancetta. Then you roll the meat and skewer it with toothpicks so it stays together. I usually then brush them with dijon mustard or olive oil and roll them in breadcrumbs. Pop them in the oven and you're good to go.

• mmm... pork tenderloin with gravy.  *drool*  It's been a long time since I had some of that, since H won't eat it.  Idiot doesn't know what he's missing.  I just put some salt, pepper, garlic, onion salt on it, then some boillon cubes in the pan.  Baste the meat with some water and juices later on and it's uber delish.

• H loves either pan fried pork chops or pan fried cube steak (doused in parmesan and breadcrumbs) and steamed green beans.  As he's a picky eater, I end up eating whatever he's willing to eat.

• cfas, how long do you normally cook your stuffed chicken? I always either undercook or overcook my chicken in the oven.
The last time I made a stuffed chicken breast I pounded them out and my neighbors below us complained (stupid apartment), so if you don't want to pound them out, you can butterfly them. Just start with a small slice on the side of the breast lengthwise and slowly cut more and deeper until you're 3/4 of the way through.
Posted by lovethebeach16
I guess I'm a bad apartment liver. I figure if I'm not doing anything crazy, they can deal with it. It's part of living in an apartment. They can deal with pounding for 10 min. lol

I wanted to make sure I got this right. Do you put the stuffing on top of the chicken and roll the meat around it?
• FI is finishing a big project today. All of this talk if making me want to cook him a celebratory dinner as well!

Yes. You pound it out and then when it's still laying out flat, you layer whatever the 'stuffing' is. Then you start at one end and roll it up. Toothpick the ends so it goes almost all the way through. :)

Or as someone else said, just butterfly it.

Yup, pound it thin and roll.
• Does it make me immature that I find it funny how much we've said "pound the meat" in this threat? Tongue out
• Get Jumbo shrimp and wrap them in bacon and marinate in pineapple teriyaki marinade. broil them so the bacon and marinade get very crispy. Yummy!
• I'm so effing pumped about this meal:
Chicken stuffed with asiago, spinach, prosciutto and suated garlic and shallots
Roasted garlic mashed potatoes
Honey and balsamic vinegar green beans
Homemade garlic and cheese bread.

NOM.

• LVB, this is the best thing I've ever cooked in my life.  I made it for Valentine's Day this year.

Also, the one time I made stuffed chicken breasts, I buttlerflied and pounded them, and put bacon, shredded cheese, and broccoli in each one.  Then I breaded and baked them, and served them with twice baked potatoes.  Fabulous meal.
