I am in desperate need...

of zucchini recipes! I have bionic zucchini growing in my garden and I'm sick of zucchini bread! So lay 'em on me!

  •  i don't have the recipe, but my friend makes amazing zucchini soup. Maybe try looking online for some? She tops it with a little parm cheese.

  • I had the same problem this year.  I never want to see another zucchini again.  I made zucchini muffins (same as bread), zucchini pancakes (fritters - pp), fried zucchini, and if you do meatloaf, put in some shredded zucks, and bake it in a hallowed out large zuck with cheese on top, ummm....what else? shredded zuck in grilled hamburgers is good.  Fresh, small zuc's in vinegar, olive oil, tomatoe, garlic, red onions is good too.
  • We always just fry it in parmasean cheese...I have nothing else to offer.   But now I want zucchini -- send me some!
  • slice them longwise so theyre like a quarter inch thick, spray with a little pam spray, sprinkle a little garlic. then add some spaghetti sauce and shredded cheese slice them real thin, use them instead of peas in shepherds pie i love them just plain old roasted zucchini parm in the fashion of eggplant parm?(never tried that, but it just popped in my head, and me thinks it would work) chunked zucchini with cooked chicken chunks, mix together with a can of cream of mushroom soup(the condensed kind, dont add water) and chunks of velveeta cheese, bake it on 400 for like 25-30 min raw, in an antipasto salad with chunks of mozz, chunks of pepperoni, cherry tomatoes, s/p, oil and vinegar
  • shred on a mandolin and put into salad. Sounds strange, tastes good. Also, spaghetti sauce! That's what we used to do with our overages.

  • I have recipes for zucchini peanut butter brownies (de-lish!), zucchini cake, and zucchnini carrot cake. If any of these intrest you, I'll type 'em up and post 'em for you. :) Let me know!
  • fried zuchinni--quarterered, and fried. zuchinni parm. grilled with lemon and garlic in strifries stuffed --cut in half, scoop out the middle, add some hamburg or any meat, cheese, seasonings, and bake you can also blanch it and freeze itwe had a lot from FI's parents last summer, so that's what we did

  • thanks all! And ditto on the fried zucchini - probably my FAVORITE thing to do with zucchini. I'm trying not to make too much of it, or I'll gain back all the weight I've lost! And MrsEmJay - brownie recipe PLEASE - that sounds so crazy! (but crazy enough to be delish!)

    Raw zucchini with hummus is soo good. Or take a page from the Jewish book and make kugel. We had it last night for Shabbos and it was sooo good. 4 large zucchini or 6 to 8 small zucchini 2 carrots 1 medium onion 6 eggs, beaten 1 tablespoon oil Salt and pepper to taste 1 to 2 cups matzo meal Instructions: Preheat oven to 350 degrees. Grate the zucchini, carrots and onion in a food processor, or hand-grate the zucchini and carrots and finely chop the onion. Place the grated vegetables in a large bowl. Add the eggs and oil, and season with salt and pepper. Stir in 1 cup matzo meal. If the mixture is very liquidy, stir in more matzo meal, 1/4 cup at a time. (As the eggs bake, it will absorb much of the liquid.) Place in a well-greased 13-by-9-by-2-inch pan. Bake for 1 hour, or until a toothpick placed in the center of the kugel comes out clean. Nutrition: Per serving: 108 calories (percent of calories from fat, 33), 5 grams protein, 13 grams carbohydrates, 2 grams fiber, 4 grams fat (1 gram saturated), 106 milligrams cholesterol, 130 milligrams sodium.
  • Not too exciting but I just slice it up into thin slices and stir fry it with garlic and pepper over medium heat on the stove, simple and delicious!

  • 1 c. butter softened1 c. sugar1/2 c. brown sugar1/2 c. creamy peanutbutter2 eggs1/2 c. applesauce2/3 c. chocolate chips1 tsp vanilla2 1/2 c. flour1/4 c. cocoa1 tsp baking soda1 tsp salt2 c. shredded zucchini, drained and squeezedPreheat oven to 350Cream butter, peanut butter, and sugars. Add eggs one at a time. Beat in applesauce and vanilla. In a separate bowl combine flour, cocoa, baking soda, and salt. Add to wet ingredients. Fold in zucchini and chocolate chips. Spread onto greased pan. Bake 35-40 min. ENJOY! :)
