Party recipe roundup!

I'm accompanying FI to his work Fantasy Football draft party tomorrow (laugh it up).  He offered to bring something, but guidance wasn't really given as to what to bring.  Normally I'd make pasta salad, but someone is already bringing that.  Sooo...give me a quick, easy, and delicious recipe :)  Or direct me to a recent thread about this.  That works too.

  • I don't know what they're called, but you take various types of lunchmeat, spread some softened cream cheese onto a slice of lunchmeat and add a leaf of spinach. Then roll it up and voila! They're so good! You can put toothpicks through them to make them even fancier!
  • Here's my favorite:Spinach Artechoke Dip1 cup fresh chopped spinach1 14 oz can artechoke hearts (chopped)1/2 cup finely chopped red onion1/2 cup mayo1/2 cup sour cream1 tbs dijion mustard1/2 cup mozzerella cheese (I like it cheesy, so sometimes I add more cheese)1/2 cup parm cheesesalt and pepper to tastebake 350 for 15 minutes serve with bread, chips or crackersit can also be made ahead and put in the fridge until you're ready to bake it
  • Taco Bean dip: 1 lb ground hamburger/turkey. Brown w/ 2 packets taco seasoning. Drain. Add 2 (3?) cans refried beans and 1 block/bag shredded cheddar cheese. Add taco bell hot sauce to flavor (can use packets or buy bottle at store) Stir until cheese is melted and beans are hot. Serve w/ tortilla chips

  • Mmmm, taco dip!  Tide you just reminded me I haven't made taco dip in forever!  Perhaps I'll make my taco dip, and yours too, it sounds tasty.

  • You could make a melon boat. You carve out in inside of a half of watermelon. Then you cut up the watermelon into cubes, make some melon balls from cnateloupe and honeydew, dress with kiwi and funky toothpics and voila! Melon boat. Or how about kielbasa rounds with mustard and horseradish dressing?
  • Melon boats sound fun!  So do Smores brownies.  Shoot, I need to have a party of my  own, I think!

  • Spinach and artichoke dip!1 box of frozen spinach, defrosted and drained.1 can of alfredo sauce1 can of quarters artichoke hearts1/2 cup of parmesean cheesesome minced garliclil bit of salt and pepperand then toss some shredded mozzarella cheese on top and bake it in the oven...no certain temp..just so it warms upor my other fav...A Cheese Ball2 8oz. boxes of cream cheese 1/2 green pepper1/2 chopped walnuts1/2 (small can)crushed pineapple (drained so the cheese ball doesn't get soggy)2 tables spoons of chopped onion (I usually skip this)teaspoon of season saltand leave in the fridge overnightGL!

  • I lurve taco dip. It's usually something that I throw together, so I don't remember the specifics - just play with the recipe/amounts until it tastes "right." Funny taco dip story - I first made it for New Years about 8 years ago, when DH and I first dated. We were upstairs in my room celebrating with some friends. Had the taco dip, 2 bowls of chips and a plate of homemade fudge. We went downstairs to watch the ball drop. As we were on our way down, my old golden retriever, Max, went up the stairs. We didn't think anything of it. We were downstairs for 2 MINUTES and then went back upstairs. On our way up, Max came down with chocolate around his lips. In time we were gone he ate the entire plate of fudge, both bowls of chips and about 3/4 of the bean dip. The dog had an iron stomach - he was no worse for the wear.

  • S'more brownies are SUPER easy: all you need is: Graham Cracker crumbs and a little melted butter. Brownie mix (and necessary ingredients to make) mini marshmallows Line pan with foil. mix enough butter and crumbs to create a thick coating along the bottom of baking pan. Pour brownie mix on top. Bake according to brownie mix instruction (may take an extra 5 minutes because of crumbs). When finished, pull out of oven and cover top with a layer of marshmallows. Turn on broiler and return to oven. Bake until marshmallows begin to brown on top- less than 5 min.

  • Oh my gosh, Tide!  That sounds like something my parents' old dog would have done.  I'll bet he was realllllly pleased with himself too!

  • Oh yeah he was. You could see the smile in his eyes. Of course, this is the same dog that used to chew on lightbulbs so... Yeah.

  • Easy potato salad is boiled red potatoes (drained and cooled) chopped red (1/2 of the onion) or green onion (1 bunch, both white and green part) 1/2 bunch of cilantro, chopped fresh lime juice mayo

  • Ooooh, I didn't even think about doing Nuggs mac and cheese.  That's a wonderful idea!Andi, that corn, potato, and pepper salad sounds awesome too!
