Finalizing menu and a question

I need some suggestions ladies. I have a tentative menu but I think something is missing. Just over 1/3 of our guests are vegetarian and we knew going into selecting the menu that we'd have quite a few vegetarians. My mom wants to make the vegetarian entre but we've decided to have a family friend make it since my mom will have her hands full on the day of the wedding. The family friend wants to add more hor dourves to accommodate the vegetarians but I think we have enough hor dourves for everyone. What I think is missing is dessert. I'm clueless right now, so feel free to suggest dessert ideas. Oh I thought about an icecream bar, would that be too messy? That's all I got :(

Quesadillas - Assorted with salsa and sour cream
Empanadas with Beef and Black Beans Served with Salsa and Sour Cream

International Cheese Presentation w/ Gourmet Crackers
 
Sit Down Dinner
House Salad with two homemade Dressings

Island Chicken

Stuffed with Red and Green Peppers, Onions, and

Pineapple, ladled with a Mango BBQ Sauce

Or 

Vegetarian Dinner Roast

Soy based meat substitute sauted in onions, and

Green peppers in a creamy sauce

Sides

Yellow rice accented with green peas and

red peppers

Fresh steamed vegetables

Assorted dinner rolls with creamy butter

Dessert

Wedding Cake

We have four different flavors for wedding cake (Black cake, yellow with strawberry filling, carrot with cream cheese filling, and chocolate cake with raspberry filling). 

What do you think?

    If you want to offer another dessert have a candy bar; it can serve as a favor and a dessert.  They seem to be a hit on all the shows I have seen. Just my thoughts. Everything else looks good to me.

    You could also do chocolate covered fruit for dessert. If you and Fi have a favorite sweet that you like you can offer that. Candy buffets are mostly DIY but I have found people that specialize in doing them but not a bakery. You can just buy a whole bunch of different size jars and vases and fill them with you and FI's favorite candy. You can decorate the table it is on,wrap some ribbon around the vases and color code the candy to your wedding colors if you want.

    They are do it your self.  You find jars to store the candy inon the table and bags for the guest to put they treats in and the candies that you want for your candy bar.  Maybe you can find something in the DIY. Or post a question for the ladies here. I'm not having one but I know some ladies have so they should be able to help you. Good Luck!

    So I have seen people do them and advertise to for them at bridal fairs here in Los Angeles. So I am sure there are some people out there that do it. But I think it is fairly easy to do it yourself and that is something that could be done in advance.

    Also, I love the chocolate covered treats ideas... that is just a chocolate fountain and some treats!!

    IMO the menu sounds fine and no extra dessert is needed unless you just want it.  One thing my mom reminded me of when deciding on a menu is that your guests will be drinking from cocktail hour til the end of the night and when most people drink they don't eat a lot of sweets (this might not be an issue if you aren't having an open bar). So we are just having cake for dessert, plus I don't want the kids bouncing off the walls.  

    If you decide to go with another dessert, a candy buffet would be a good idea.  You can buy the apothecary jars online at save on crafts.com or Michael's and fill them yourself.  Good luck.
