    Heh... Head cheese:

    Head cheese (AmE) or brawn (BrE) is a cold cut originating in Europe. Another version pickled with vinegar is known as souse. Head cheese is not a cheesepig (sometimes a sheepcow) in aspic. While the parts used can vary, the brain, eyes and ears are often removed. The tongue, and sometimes even the feet and heart may be included. Head cheese may be flavored with onion, black pepper, allspice, bay leaf, salt, and vinegar. It is usually eaten cold or at room temperature as a luncheon meat. but a meat jelly made with flesh from the head of a calf or or

    Historically meat jellies were made of the cleaned (all organs removed) head of the animal, which was simmered to produce stock, a peasant food made since the Middle Ages. When cooled, the stock congeals because of the natural gelatin found in the skull. The aspic may need additional gelatin in order to set properly.

  • From my limited skimming of that list, it seemed a lot of it was mexican- and we have really limited access to traditional mexican food here (although now I fill it out, it wasn't too much mexican in reality and I've had it all before! haha). The main issue was language; you'd be amazed at how many of these US regional words that I didn't understand. Thus, google has now helped me answer some of the below!

    Odd list -- a lot of those things don't seem at all exotic, but I have no idea what a few of them are. And yeah, ostrich should be on the list. And I have eaten it. Didn't much care for it -- at least the way I had it prepared, it tasted like ham, which I don't like.
  • @TheSun, the saddest part is, you'll never be able to have a true s'more down here.  You don't have graham crackers or Hershey chocolate bars. 

    Next time you're in the states I highly recommend you ask your hosts about this delicacy :-)

  • Yeah, LD, LA has 1 and 2 Michelin Star restaurants by not 3. It sucks. 

    Some of my favorite things are on this list. I always order eggs benedict or huevos rancheros for breakfast. And my favorite beer is 11% ABV. Surprised

We have mexican restaurants here, but what they serve is far from authentic.</p><p>That said, in san fran we went to a mexican restaurant (numerous times! It was a bar/restaurant and became our SF home, haha) and I had lots of delicious food more authentic mexican there. And I've made huevos rancheros for breakfast a couple of times myself- no clue if it is at all authentic using the recipe I have, but it is good! </p>
