Any other celiac brides?

I am a very sensitive celiac and because of this not able or willing to trust anyone to provide our food. We are doing a BBQ so the menu is BBQ chicken, tri-tip, and ribs with potato salad, green salad and fuit. Any other celiac brides with menu ideas? Also appetizer ideas because we need something to put out beforehand that will be okay out in 100 + degree heat. 

Also, I am making our cake because we don't even have a gluten free bakery nearby. What is your fave gluten free flour combo or mix? I am starting to practice now and would like to try a couple alternate flavors for the cake/cupcakes.

  • I almost always advise brides who can afford it to go with a caterer or a restaurant's catering menu because of the stress, time, and food safety concerns/logistics of trying to cater something as large as a wedding while also enjoying yourself as the bride/groom.  This is no exception.  Why can't you find a caterer who will agree to use absolutely no gluten in the prep?  If they are professional they should be able to do this.  You could even find someone to prepare the exact menu that you've already chosen (which sounds delicious, btw) which doesn't require flour and just make sure to stress and put in the contract that they can't use flour or gluten. 

    For the cake I suggest either finding a bakery that will do gluten-free cakes (they're becoming more and more popular as awareness of celiac increases) or use a regular bakery for the display cake but have gluten free cupcakes for yourself and other celiac guests.   Again, you won't want to be baking and assembling your wedding cake in the days leading up to the wedding.  

     
  • Where are you located? Im a celiac as is my mom, maid of honor, and one of my bridesmaids. We're actually going to have a caterer, and a cake done in a gf bakery. The whole thing will be gf :)

  • Appetizers I'd reccomend a fruit tray, veggie tray, maybe shrimp on ice, and/or colduts/cheese. We'll be doing these with a couple of hot appetizers like chicken on a stick with peanut sauce, hot gluten free spinach/crab dip with corn chips, etc.

    For the main course we're probably going to do a carved meat other than beef because thats a no no for me, and a chicken, and fish. We'll do a rissotto, a salad, and a couple of veggies.

    As to cakes which mixes have you tried? There is a gf cake doctor book now it has a chocolate sour cream cake that is to die for we eat a lot of that. I really like the doud and rogers mixes but they make small cakes and are expensive. Remember gluten free baking can be tricky some of the mixes cant be doubled same for the recipes.

    For the grooms cake we're doing assorted gluten free pies because he prefers pie.

    We are not serving bread, or crackers.

    Our menu is no where near finalized we have 18 months. These are just the base discussions we've had. We are holding a very formal evening wedding hence formal food.

    Our appitizers will be fruits, and veggies with GF dip. (Humus would also be great!) And cheese and GF crackers. A salad, with cranberry and feta.
    We are having crab cakes and chicken, veggies and a potato.

    We are getting a GF cake from a baker that is fabulous! He is not strictly GF, but will do GF and vegan. He discussed how he does his best to prevent cross contamination. And the chocoalte cake was YUMMY! And GF fondant tasted like marshmallow...he said he uses it all the time now, because it tastes better.

    Our vender/caterer has also done GF before. I have done a taste testing there, too...and I was fine. They have called to double check about what is OK and what is not. What is safe for me. And I have told them I am fine with regular crackers and rolls being served, as long as I know none will touch my plate/food. But I think they are just gonna serve GF food. They say it is easier to make sure everything is safe.

    Which bakery are you using? We're going to get married up your way. I'm leaning towards the Happy Tart in Alexandria right now, sweet sin, or freedom bakery, (these three are completely gf) but I'm open to other options.

  • Artistic Desserts, Michael is wonderful. Up in Westminster, near Baltimore. He can do GF if you want chocolate, says he can do other flavors, but they just don't turn out as good. I brought my soon to be SIL to the tasting, she LOVED the GF chocolate cake!! ANd she was tasting the non-Gf cakes for me. We are going to have a tier of regular, and a tier of GF. (He said there should be no contamination issues, but I still plan to get my slice first ;) ) His fillings are amazing!! And his designs are beautiful!

    If you want cupcakes, I'll recommend Sweet Sin!! I think if you want a decorated cake you have to take it to Charm City? I don't wanna think about the price for that. And the man didn't think that the cupcakes were wedding quality. (He is the picky one!)

    Freedom Baker is right down the road from me, their cupcakes are good, they satisfy my cravings. But, wedding wurthy? Not really. And the man says that they taste funny, but he can eat "normal ones.' And if you want a nice decorated wedding cake-I'm not convinced they can do it. Their bread and pastries are really good!

    I'm not familiar with Happy Tart. But will have to check them out!
  • I 100% reccomend happy tart, I'll probably be going with them as they can do any flavor. The ones I've tried have all tasted like really great cakes.

  • My mother has a wheat allergy, so we're doing a wheat-free dinner, but the appetizers and cake will have wheat. She's not big on dessert, and she'll miss cocktail hour any way.

    Our caterer is not a gluten-free specialist. They're new and small, yet they put together a menu of chicken, pork, potatoes, asparagus, and salad with 0 wheat, oats, or rye, and 0 soy.
  • I adore quinoa - there are dozens of salads that can be made and dressed without mayo, so it will sit well in the heat.

    I love cucumber and dill, so fairly thick slices with a pretty swirl of dill cream cheese - yum!
  • We live in northern california so its kind of like the dark ages up here. there is one great gluten free restaurant but no possible way to afford it and we don't want that type of specialty food anyway. Our friends are doing the BBQ with the food I directly provide them on the grill I provide. "Mostly gluten free" isn't good enough for me, I'm just way too sensitive. I would probably rather die than spend our honeymoon sick in bed! I love the fruit idea for munching on since it will be sooo hot and fruit is nice and juicy and cool!
  • I can ask my MIL for her GF cake recipes! She's currently writing a GF cookbook. She's been on the paleo diet for the past five years, and before that owned her own bakery, so all her GF desserts are amazing. Like, can't tell the difference between GF and with gluten versions. PM  me if you're interested!
