I was cruising sparkrecipes.com for dinner ideas yesterday and came upon this:
http://recipes.sparkpeople.com/recipe-detail.asp?recipe=204636FI didn't have any objections, and I'm a pasta fiend, so we gave it a go. He really liked it, I LOVED it, so I decided I had to share this recipe find.
I didn't use the mushrooms, and substituted garlic powder for minced garlic (didn't realize we were out), and it came out great for us. The recipe uses part skim ricotta and mozzarella for those looking to lose weight (this is what we used), but if you wanted a meal that was more calorie dense, you could easily use whole milk cheeses instead.
