Ocean Margarita Jelly Shots
2/3 cup Rose’s lime syrup
1 to 2 tablespoons sugar
1/3 cup water
2 envelopes unflavored gelatin
¾ cup tequila
½ cup blue Curaçao
Combine lime syrup, sugar and water in small saucepan. Sprinkle gelatin over top and let stand for a few minutes; stir. Bring to a boil over low heat until gelatin is dissolved, stirring constantly, about 5 minutes. Remove from heat; stir in tequila and Curacao. Pour into 8x4-inch loaf pan. Cover and refrigerate until set, several hours or overnight.
To serve, place loaf pan in hot water until the gelatin is loosened. Turn onto cutting board; cut into 18 to 24 cubes with very sharp knife.
