HERE well i tried the Almond Joy cupcakes tonight for my Fi's family reunion tomorrow.
i took a chocolate cake mix and added almond syrup (like used in coffee) and finely chopped almonds
and a white cake mix and made it with coconut milk and coconut extract.
i put some chocolate/almond batter in the cupcake cups first, then topped with the coconut batter.
on some, i swirled the cakes together, some had just a dollup of the coconut in the middle, i got lazy, its after midnight, dont judge me. (on the first batch, i overfilled them btw)
for the frosting, i mixed some almond extract into some store bought whipped chocolate frosting and lightly frosted the cupcakes (because i didnt think i would have enough frosting, i was wrong, had plenty.
after they were frosted, i rolled the edges in shredded coconut and then pressed a roasted almond in the center of each one.
my intention was to make half of them "Mounds" by omitting the almond in the batter in the first half of the cupcakes, and adding it for the 2nd half (same with the frosting) and then not put an almond on top. but i forgot.
