Cooking for the In-Laws...Help!

My future in-laws are coming to my apartment for the very first time!! They live an hour and a half away so I always went to them. I'm shopping with my MIL for mother-of-the-groom dresses all day, then we're having dinner...with me as the chef!

Any suggestions on what to make?? (preferably something that can be preped before shopping and cooked after)

    Maybe something like lasagna with salad?  Or something in a crockpot like chili?  Those types of things are difficult to mess up and can be started early in the day.  I would ask fiance what they like!

  • I would also suggest pot roast! It can cook while you are gone and will be very yummy.
  • Throw a beef roast in your crock pot about 7 or 8 in the morning, cover it with water, turn crock pot on high. Add some beef base (beef paste) or boullion to the crock pot. Let it cook all day. It will be tender and ready to serve from about 5 PM on. Leave the lid on the crock pot and resist the urge to check on it, every time you take the lid off you slow the cooking process. You can add baby carrots and/or onions to the crock pot too.

    The water covering the roast makes great broth to make gravy for mashed potatoes (or bring it to a boil, stir in noodles and a some small pieces of roast for beef and noodles).

    Super easy. I put mine in about 6:30 AM, let it cook until about 5:30 or 6 PM - sounds like a terribly long time but it is fine.

    um...why can't your FI do the cooking?  You are obviously going to be busy.

    If it were me you were asking, I would answer "because I like my in-laws." But since she said they were coming to her apartment, I'm going to assume it's not her and FI's apartment, thus creating no reason for him to cook. It's her home she's invited them to. It would be incredibly rude to pawn it off on FI. If she wants a new dress and a yummy dinner, she can do it.

    I would suggest a crock pot meal. Or, something from Sandra Lee's Semi-homemade. That woman can make poptarts into English trifle.

  • i would probably do the crockpot meal==but anytime i have put one in in the morning til 5 ish i have only put it on low. Otherwise it will be very dry.
