Recipe review

http://tastykitchen.com/blog/2012/07/chicken-cordon-bleu-casserole/ I made this last night. I didn't make any modifications except to use regular bread crumbs instead of panko bread crumbs. I did also half it- there was plenty for the three of us with leftovers for my lunch today. It was pretty good- DS really liked it and ate his portion willingly (which is a win). Will be making again.

  • I am thinking of making the full batch next time around and freezing 1/2 of it to have on hand. I like chicken cordon bleu- but this is way easier (I think it took me no more than 15 minutes to put it all together).
  • That looks pretty darn good.  I did a whole chicken in the crockpot last week- wad up 4 pieces of aluminum foil and set the chicken on top.  Pour on a little melted butter/oil (1 T) and season up.  It was really tasty.  I swore if I needed another shredded chicken I'd do it this way.

    Now I know what to use that chicken for.

  • I love shredded chicken.  I use it for tacos, enchiladas, ceasar salad, my favorite broccoli cheddar chicken casserole etc.  I need to just make 10 lbs of it once a month and then use it for everything.  ;) 
  • If you can get skin on, bone in chicken breast cheap just roast them and shred the meat. I portion it our into 1 and 2 cup servings and then freeze to have on hand. Now that there are turkey's for cheap, you can do it with a smaller sized turkey or just a turkey breast. It is so nice to have on hand.
  • My husband would eat the sweet mercy out of that, but I don't eat pork, sigh.

  • Oooh, that looks awesome! I know what DH is getting for dinner on Saturday!!
