Lime-Cumin Dressing

Okay - here you go, @Swazzle…

Lime-Cumin Dressing
1/4 cup fresh lime juice
1 tbsp canola oil
1 tbsp honey
1/2 tsp kosher salt
1/2 tsp ground cumin
1/8 tsp coarsely ground pepper

And, if interested, we use it on a Grilled Southwestern Shrimp Salad
3/4 lb peeled and defined large shrimp
1 tsp chili powder
2 ears corn (note: I use frozen for ease)
6 cups chopper romain lettuce
2 large tomatoes
1 cup diced peeled avocado

    Do you think I could use olive oil in place of canola oil? I don't have canola oil and I actually don't even know what it is (I've obviously heard of it but what IS it?).

    Yep - we actually use olive oil instead, too. Canola is apparently a seed (I only know that from my best friend, google. I think olive oil is much better for you).
