  Amaryllis is a great holiday flower (best used while still potted not cut)  Also just a mix of holiday greenery (especially magnolia leaves) are gorgeous as well.  But I also like dark red roses such as black magic and white dendrobium orchids (light and airy like snow) are very pretty as well.  White wax flower would be a great filler option.  But if you want to stick to a holiday type feel go with lots of fresh winter greens, candles and really gorgeous christmas ornaments.  Finally, they sell gold and silver glitter spray and if used lightly adds just a bit of sparkle to winter greens without it being too blinged out.

  The Flowers Blooming in Winter are:

  Acashia, Alstromeria, Amaryllis, Carnation, Chrysanthemums, Cyclamen, Evergreens, Gerbera Daisy, Ginger, Helleborus, Holly berry, Lily, Asiatic Lily, Casa Blanca Lily, Narcissus, Orchid, Pansy, Pepperberry, Phlox, Protea, Queen Ann's Lace, Roses, Star of Bethlehem, Statice.

  We got married at the end of January and our centerpieces were white roses (closed), white tulips and pussy willow branches.

  I say it would depend where you are getting married. If it will be in a warmer place, you will have more options available to you. You can do wonders with baby's breath, especially since it could look like snow.
