This thread is really making me want fall to hurry up and get here so I can start making soups and chilis again!!
My excuse to make chili in the summer: hot taco salad. I make a pot of chili and pour a scoop over lettuce, tomato, shredded cheese, and crunched up Doritos. SO GOOD.
Girl I don't even use the stove in the summer. Too hot for open flame. If it can't be cooked on the grill, in the crock pot or in the microwave, we don't eat it.
You don't have to wait just make the chili in the crock pot! That's the only reason I'm up and on here this early I got up to throw chili in the crock pot and corn bread in the oven before it got too hot to want the oven on.
I can't do the meat in the crock pot though... I have to brown it in a skillet before I throw it in. Skeeves me out otherwise. Plus I taste it a lot while it's cooking, so I need the meat to be edible right away.
I brown the meat and then throw it in the crock pot all the time. I mean, yea, you're hot for a few minutes while the meat is browning but that's better than having the stove on for hours!

That's how I did it this morning and luckily my house is always freezing at 6 a.m.

  • I still prefer not to eat a big piping bowl of something hot in the summer though. IDK. I'll wait for fall. :)

  • Sorry Lolo- I heart mayo and I hate chili. Well actually I will eat the meat out of chili, I just can't stand beans.

  • It's never occurred to me not to use the stove top in the summer because of heat.   On the other note I use the grill when it's 40 degrees out and 6 inches of snow.

What differentiates an average host and a great host is anticipating unexpressed needs and wants of their guests.  Just because the want/need is not expressed, doesn't mean it wouldn't be appreciated.

My FI is pretty stingy when it comes to running the AC, and I can't handle being hot. :( I have grilled outside in 3 feet of snow though.

You can come to my house.  I make it without beans, just lots and lots of meat :D

  • I prefer almost everything fresh.  Although, I do think soup gets better after sitting in the fridge for awhile.
    image
  • I admit it: I like leftovers of most stuff. But I almost never just have it straight, I'll do something with it. We rarely have dinners that are more elaborate than chicken w/ steamed broccoli, and when we do FI fills his empty leg and my fridge is empty.

BTW leftover pizza? Pizza eggs. Take all the deliciousness off from the crust, scramble up with eggs. It looks horrible, but so tasty.

  • Leftover lasagna or pizza (if there even is any that makes it to the leftover stage) does not last long enough in my house to go bad.

I try to make small enough portions on most things unless I know it is a meal that will keep well and that FI will bring it to work with him for lunch.

Yay! Mayo and beanless chili, good thing lolo dropped you because you're MY new best friend. Recipe?

@lolo883 Do you have a pot that can withstand high temperatures?  Because you can absolutely put it on the grill.  FI has made spaghetti (sauce AND noodles) and even baked cookies (!) on the grill.

You can also do cobbler on the grill.  Pretty much anything you can put in a pot or pan can be cooked on the grill.
I have a cast iron pot, but I'm too lazy to give it the cleaning it needs. :) We've done campfire cobblers before, and I've made mac and cheese on the grill. It's not like I'm suffering grilling steak and corn though. ;)
And this is why I have a crockpot. We use ours more in the summer than in the winter. Crockpot chili still requires browning the meat and onions but no heavy cooking.

  • I love putting leftover mashed potatoes in the waffle iron. Sadly, ours died so I'm hoping we get the one we registered for. Leftover stuffing is pretty good in one too.

I'm happy with most leftovers besides the obviously nasty: fries, sandwiches, soggy salads, etc. Unfortunately, my boys only eat leftovers if they're the good stuff: tamales, carnitas, sloppy joe, steak, etc. So I get stuck with the leftovers of anything healthy to avoid tossing it a week later. I suppose it's healthier but I get seriously pissed when everything particularly yummy is gone.

You just blew my mind. I must try that the next time I have mashed potatoes.
  • I THINK I LOVE YOU.
I love day old popcorn so much, and everybody tells me how weird I am!

  • I am not a big fan of leftovers at all except macaroni and cheese. I know it dries it out but I like how the cheese sticks to the noodles better!

I take scoops of mashed potatoes, roll them in egg and breadcrumbs, then throw them in the Fry Daddy for 15 seconds. They do not last long!

Yay! Mayo and beanless chili, good thing lolo dropped you because you're MY new best friend. Recipe?
So I don't follow an exact recipe, but here is what I do:
    -1-2lb chuck roast
    -1lb ground chuck
    -1 big onion
-2 bell peppers (I don't care for green, but any other colors work for me)
-1-2 spicy chiles (jalapeno or serrano)
    -3-4 garlic cloves
-tons of chili powder, at least 3 T
-salt, pepper, garlic powder, onion powder, paprika, red pepper flakes--all to taste
    -1 bottle Newcastle
    -beef broth
    -1 small can tomato paste
    -2-3 T corn meal

    1. Cut roast into tiny pieces.  Throw it in a pot with the ground beef and sprinkle on some salt.  I do a dry pan because the meat is fatty.  Cook it until it's all nice and brown.  I don't drain the fat, but I will spoon it out if there's a ton.

    2. Throw in all the veggies, chopped.  Let them cook in the meat fat until they're tender.  Sprinkle on all the dry seasonings.  Cook a few more minutes.

    3. Add beer and tomato paste.  Cook a couple minutes.

    4. Add broth until the meat stuff is just barely covered.

    5. Simmer a few hours.

    6. Add the cornmeal to thicken it all up.  Cook a few more minutes.

Top with cheese, sour cream, onion, crackers, whatever you like :)  Sometimes we get crazy and make nachos with it (pour over tortilla chips and top with nacho stuff).  It's also yummy on a baked potato.

ETA: I taste it at every step and adjust flavors as needed.  I usually start light because they concentrate as it cooks.
