  How about Rock Island Lake Club? They're completely new and there's no carpet in the ballroom. It's a little bit more on the rustic side, so not sure if that's what you're going for.

   I felt the same way about having carpet at my venue. I booked at Addison Park and love it! Other venues on the list were South Gate Manor, as you mentioned, Liberty House and Stone House. I only looked at South Gate and Addison before booking, though.

  I don't think Maritime Parc in Jersey City has carpeting, either.

  omg..that was my pet peeve too..i would say addison park..it was all black and white marble floor or we just booked at south gate manor in freehold...dark brown marble..

  The Tides Estate - their upstairs room for up to 350 people is all hardwood flooring and floor to ceiling windows. I booked there but their but downstairs room because I wanted use of the outdoor patio. The entire place is gorgeous.
