  With champagne? You could use pink moscato instead to make it pink. If non alcoholic, could you find one with mostly clear ingredients (7up or ginger ale) and use food coloring?

  I made a punch with wine (either moscato or riesling or pinot grigio depending on how sweet you want it), pink lemonade and sprite.  It was pretty darn tasty.  And like PP said, you could use pink moscato if you really wanted to punch up the color.
