nwr- Mexican food buffet for grad party

We're starting to plan my daughter's high school graduation party for next June, and she'd like to have Mexican food. Party will be outdoors under a tent in my large backyard, plenty of electrical access. I'd like to kind of have a "fix your own" Mexican buffet so people can fix tacos , nachos etc. We do have several vegetarians, but they do all eat regular cheese.

I'm thinking we'll have seasoned ground beef and seasoned beans for the proteins, and soft tortillas and tostitos. For fixings I'm thinking-

onions
black olives
lettuce
tomato
shredded cheese
sour cream
guacamole

I'll probably have a rice dish and nacho cheese as well. Maybe refried beans?

We'll have beverages and cake as well. Am I missing anything? Any tips on how to serve? Thanks!

    I would add:
     
    Chicken: Either sliced, fajita style, or shredded.  
    Chips & Salsa
    Diced green chiles (either instead of, or in addition to the olives.

    PS.  Mexican rice is often made with chicken broth instead of water. If you are having this catered, make sure they don't use broth, so your vegetarians can enjoy it also.
  • Oh god, yes definitely salsa, just forgot to put that, and we're having jalapenos also. The graduating child is nutso about salsa, that's how we picked Mexican food! 

    The beans and rice will absolutely both be vegetarian, so no problems there.

    I was debating whether I could skip out on chicken or not but I think you're right, and I know fi and my oldest son would prefer it anyway, so we'll add that. I'll add some green chilis too, that's easy enough.

  • We did something similar for our daughter's graduation party, but of course, carried the theme beyond the food......just in case you're as crazy for a theme as I am.....

  • If you want to stretch the chicken a little further you could do a shredded chicken. I usually boil chicken breasts, shred it then let it stew in a crockpot with salsa, corn and some spices like chili powder, smoked paprika, cumin and a bit of cayanne. It tastes awesome and keeps well when warmed in a chafing dish. I eat it as a taco filling, on nachos, in enchiladas and even on baked potatoes. It's really yummy, and again it's a good way to stretch the chicken a little further.
