We're starting to plan my daughter's high school graduation party for next June, and she'd like to have Mexican food. Party will be outdoors under a tent in my large backyard, plenty of electrical access. I'd like to kind of have a "fix your own" Mexican buffet so people can fix tacos , nachos etc. We do have several vegetarians, but they do all eat regular cheese.
I'm thinking we'll have seasoned ground beef and seasoned beans for the proteins, and soft tortillas and tostitos. For fixings I'm thinking-
onions
black olives
lettuce
tomato
shredded cheese
sour cream
guacamole
I'll probably have a rice dish and nacho cheese as well. Maybe refried beans?
We'll have beverages and cake as well. Am I missing anything? Any tips on how to serve? Thanks!
