I am having a St. Patrick's day wedding as well... and so very excited! Like you, I want accents not a field of green. My BM dresses are actually called clover green... lol, but I fell in love with the color and style for my girls... we are using hot pink and vibrant orange flowers with green accents, my bouquet will have some ivory colored flowers as well. Don't forget the horseshoe (very small) in your bouquet.
We are using the Irish wedding blessing as part of our day, and I found a beautiful subtle shamrock that I felt was understated, but added just the right touch on our programs, save the date cards, receptions favors and other printed product. I am going to have bells of Ireland flowers for the ceremony at the alter as well as I have my nephew ringing a bell (Irish tradition) right before I walk down the aisle.
At the reception - we are naming our tables after Irish clans instead of numbering them. I already put that together and found the family crests online. We will surely be using some shamrocks in our floral arrangements. I am attempting to keep most of the day formal, but once dinner is over and we are ready to celebrate - we want to just have fun... Irish beads and other fun stuff... once the dancing starts... :)
Most of all - make it yours, we are having a "traditional" wedding ceremony, but will not be using any of the traditional songs, readings, vows, etc... I am adamant about having a wedding that is special and meaningful to my FH and I… I guess I want it to be “different” without being too different… enjoy your planning – it will be here before you know it! :)

I dreamed of a wedding of elaborate elegance,
A church filled with family and friends.
I asked him what kind of a wedding he wished for,
He said one that would make me his wife.
