Hey 6 :)

What did you end up making for your SIL, re: freezer meals and the like while she's getting treated? What went over really well?

I have myself a cooking project in the similar spirit of making meals for a coworker and her family. The only thing coming to mind is lasagna :-/

    The biggest hit has been personal burritos!  There are a million recipes, but I just do a mix of rice, ground beef, black beans, and salsa (6let likes refried bean too).  Scoop some in the tortilla, top with cheese, roll, wrap individually in saran and freeze.

    I used these two websites to pick recipes.  They aren't fancy in the least, but they are easy and good. When I did them for MIL (should surgery) and SIL I sent a list and let them pick what sounded good.

    I have eaten:
    BBQ Cranberry chicken (just meh)
    Pineapple glazed ham
    Sweet teriyaki chicken (cut the sugar some and add frozen broccoli)
    Creamy Ranch pork chops (I add carrots)
    Black bean taco soup
    chicken cacciatore
    Beef stew
    Maple Dijon Glazed chicken

    GBCK recommended these egg muffins and they are very good.  I've mixed up the ham for bacon and some different veggies.  One thing I did was not mix in the veggies and protein.  I poured a little egg mixture in, drop in the veggies and protein, then add more egg mixture.  When I mixed it all up the last muffins got all of the good stuff.

    I also bought a lot of 90 second bags of rice that could go with the teriyaki chicken and the cacciatore.  Last thing we added was a bag of Hershey kisses and a bag of Hershey hugs.

    My mom typed up all the recipes.  I asked her to email them to me if you want me to forward them to you.
