Not Engaged Yet

What's cooking tonight?

I'm really excited for dinner tonight :) I'm marinating chicken thighs as I type in a delicious sounding store-bought lemon and herb marinade. FI will BBQ them when he gets home. I think I'll cook a side of fresh asparagus with olive oil, garlic and herbs, and rice with fresh onion, parsley and chicken boullion. And then we'll have salad with it. 

I know it sounds really simple, but I haven't been cooking much lately with all the holiday insanity and then getting back into the "normal" routine, so this is a good step.

  • That sounds really good, Beads! BF and I are ordering wings from Pizza Hut. I drank a little too much last night. My stomach has hated me all day - so wings sound reaaaaly good. Plus, I don't want to cook. I haven't done squat all day lol

  • Irish - FI would eat wings everyday if he could! I like them, but not that much. Scrambled eggs with mushroom soup in them and toast with jam is my hangover meal haha.

  • DetArt - Leftovers rock my socks! I'm hoping for leftovers tonight so I can have them for lunch tomorrow. I never know though - sometimes FI eats a ton, and sometimes not much at all. 

    And Mookow - I've never used a wok in my life...I wouldn't know what to do with it... The extent of my ethnic cooking is a stirfry in a frying pan. FI and I are not adventurour eaters.

  • Yesterday, I made some Southwestern spaghetti squash, kelewele, rice and a big batch of dal. I had some spaghetti squash for lunch and some kelewele with dal on it for breakfast, so I might have some of the rice and the last bit of oyakodon that I have left over from last week.

    Or I might be boring and make some pasta :D.

    I might just have a salad. Or spaghetti. It depends on if I have spaghetti sauce like I think I do.


  • Ahstillwell - The only things in yoru post I'm familiar with are pasta and rice (oh, and spaghetti squash), but I'm sure it was all delicious!

    Beth - I buy spaghetti sauce in mass quantities when it goes on sale. We never use more than 1/2 a can per meal, and I believe there are 4 cans in the cupboard right now. No worries about running out here, although I do put it in a lot of things.

  • BF and I are ordering takeout (we're lazy today) and I'm getting a fajita wrap. I'm SO excited to house that thing.
  • Argh - now I'm super hungry, and FI won't be home for another hour :( The 2 rice cakes I just chomped aren't cutting it.

    I hadn't either until tonight! FI spent a few months in Asia last year and he brought back all these recipes for things that he ate there / things he wants to try and recreate from his trip. Most of the things we've made have actually been super easy.

    Haha! I admittedly eat very weird foods. Kelewele is seasoned plantain fried in coconut oil; oyakodon is chicken with egg, onion and kale in a tamari and fish broth sauce; and dal is curried lentils.

  • Um, I just heated up some frozen veggie soup and made a grilled cheese with 2% cheddar and laughing cow. I thought it was pretty delicious, even if it was super easy! :)

    </div><div>I'm the first to admit that I eat basic foods, and don't do a lot with exotic spices. It's how my mother cooked too. It's not that our food is bland or lacks variety, it's just...easy to pronounce haha.</div>

    I made chicken breasts seasoned with cumin, paprika, chili powder, garam masala, garlic powder, salt and pepper. Then I sauteed them with some diced onions and butter. Then I made some quinoa and green beans in the same saute pan and squeezed some lemon over it. It came out AWESOME. My mom helped me throw the recipe together over the phone :) I had always planed on making tge chicken, but I was watching "Chopped" earlier today and they made quinoa and was like, mmmmm...but I wasn't quite sure how to throw it together. It's very handy to have a mom who's a professional chef!

  • We scavenged out of the freezer tonight.  We're out of real food and I was too lazy to go to the store, so we had some chicken wings and pierogies.  Classy and nutritious!

    I made a homemade, from-scratch dessert, though.
